You’ll love how easy these Chewy Oatmeal Blueberry Cookies are to make while having the perfect chewy texture and pop from the juicy blueberries! It’s the perfect excuse to use up the last little bit of fresh berries from summer before fall starts to creep in! The hearty oats and fresh berries almost make these feel like some healthy breakfast cookies! But we don’t need to worry about the sugar content, do we!?!
Fresh or Frozen Blueberries
For this recipe, I like to use fresh blueberries because I think they hold up a little bit better in the oven. Sometimes when frozen fruit is in the oven, it can release too much moisture that can throw off the balance of the cookies!
Of course, you can add in whatever ingredients you have on hand, but be mindful that the frozen berries could throw off the texture of the cookies slightly! The frozen blueberries can also change the color of the cookies slightly! However, I do think the purple-blue swirls of blueberry makes these cookies even prettier!
Dried or even freeze-dried fruit would work just as well!

Substitutions and Additions:
These Chewy Oatmeal Cookies are delicious all on their own, but I have a few options to make these cookies even better!
Nut Butter: Adding in a nut butter of some kind like peanut butter or almond butter would make these chewy cookies even better with a bit of creamy nutty flavor!
Fresh Berries: You can add in a different kind of berry if you like or you can even in dried blueberries instead! That would add the perfect chewy texture to these soft cookies!
?Citrus Flavor: Adding in some lemon juice or lemon zest would pair perfectly with the blueberry cookies and brighten up the warm flavors!
Warm Spices: You can add in cinnamon to the glaze to add a bit of warmth! One of my favorite warm flavors to add around fall is a dash of maple extract! It gives all the warm flavors of maple syrup without adding extra sweetness!
Nuts: You can add in some extra crunch with chopped nuts! From pecans, to walnuts, to peanuts, you really have a lot of options you can add to these cookies!

Equipment Needed:
Cookie Sheet – I always prefer to use a large baking sheet with parchment paper to make sure the cookies don’t stick and for an easy clean up option!
Large Mixing Bowl – I have a set of glass mixing bowls that I use every time I make cookies!
Hand Mixer – I use an electric mixer to mix the ingredients fully together, you can use stand mixer with the paddle attachment as well. Of course, you could always use a rubber spatula and mix them by hand!

Step by Step Instructions:

Step 1. In a large bowl, add butter, sugar and brown sugar. Mix together before adding egg and vanilla extract.

Step 2. After the wet ingredients are mixed together, add in the dry ingredients. Stir together.

Step 3: Add in the blueberries and gently mix together.

Step 4. Scoop out cookies and place on a parchment-lined baking sheet and bake until golden brown.
Storage Instructions:
Store these cookies in an airtight container at room temperature for about 3-4 days!
If you’re going to freeze these cookies, scoop out cookie dough without adding the blueberries and place the balls of dough on a baking sheet to let them freeze fully. Once they’re fully frozen, add to a freezer-safe bag! When you’re ready to enjoy them, let them thaw for thirty minutes at room temperature, add blueberries and bake according to recipe directions!

I like to use old-fashioned oats in these cookies, but quick cooking oats work just as well!

- Baking Sheet
Ingredients
- 1 stick Butter
- 1/2 cup Brown Sugar
- 1/2 cup White Sugar
- 1 Egg
- 1 1/2 cups Flour
- 1 cup Oats
- 1/2 teaspoon Baking Powder
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Cinnamon
- 1/2 cup Blueberries
Vanilla Glaze:
- 1 cup Powdered Sugar
- 1 teaspoon Vanilla Extract
- 2-4 tablespoons Heavy Cream
Instructions
- Preheat oven to 350 degrees.
- To a large bowl, add in butter, sugar and brown sugar. Mix together.1 stick Butter, 1/2 cup Brown Sugar, 1/2 cup White Sugar
- Then, add in vanilla extract and egg.1 Egg, 1 teaspoon Vanilla Extract
- Once all the wet ingredients are mixed together, add in flour, oats, baking powder, cinnamon, and salt.1 1/2 cups Flour, 1 cup Oats, 1/2 teaspoon Baking Powder, 1/2 teaspoon Cinnamon
- Stir together the dry ingredients, before adding in the blueberries.1/2 cup Blueberries
- Scoop cookie dough onto a parchment paper-lined baking sheet and bake for about 15 minutes.
- While cookies cool slightly, make the glaze by combining powdered sugar, heavy cream, salt, and vanilla extract.1 cup Powdered Sugar, 1 teaspoon Vanilla Extract, 2-4 tablespoons Heavy Cream
- Drizzle vanilla glaze over cookies and enjoy!
