This lemony blueberry galette is a perfect, easy to throw together dessert! If you’ve never had a galette, you’re in luck! It’s everything you love about pie, without all the hassle that comes from making a pie! The best part of this recipe is that you can customize it based off your favorite fruits! From blackberries to cherries, you can switch out the fruit based on what you’re craving and what’s in season that time of year! With summer blueberries fresh on the rise, I like to add them to this blueberry pie with a bit of lemon zest and a scoop of vanilla ice cream! It’s the perfect summer treat! 

Galette Versus Pie 

So what even is a galette? A galette is a French term that means a freeform flakey cake, or essentially a free-form pie! It feels like a really fancy pie, but really, it’s even easier to make than a pie. The great thing about a galette is that they work for sweet or savory fillings! I’ve heard of mushroom or tomato galettes that would be perfect with the fresh vegetables coming this spring and summer! Just imagine a whole dinner party that’s galette themed! A large galette for dinner and then a blueberry lemon galette for dessert! 

With this recipe, you can put away your pie pan! In order to make this galette, just roll out some parchment paper on a large baking sheet, then roll out the pie crust. Add whatever filling you want to the center of the dough, leaving about a 2-inch border around the edges. Then just fold the pie crust over the filling! It creates a pizza-like crust! 

Honestly, I prefer making galettes to making a pie! It’s easier to make, uses less dishes, and has a beautifully rustic appearance that is perfect for any party! If you need another galette recipe to try, try out this one here!

Store-bought Pie Dough or Homemade Pie Crust 

I know there are some people who swear by their grandmother’s homemade pie crust recipe! However, I am not a fan of making my own pie crust! After watching enough pies deflate in the oven, I’ve decided it’s not something I want to deal with and that’s okay! 

If you’re like me, there are plenty of store-bought pie crusts that are perfect for this recipe! You can use the roll of premade pie crust or I’ve even seen  If you do have a family-favorite pie crust that you want to use, please go ahead and use that!

Just be sure to use a lightly floured work surface when rolling out your pie dough so it doesn’t stick to the surface! You can use a bit of all purpose flour or use a piece of parchment paper! I like to use a piece of parchment paper because then it’s easier to add to a baking sheet! 

Equipment Needed:

Large bowl – I like to use this to mix everything together! 

Parchment Paper – this helps for easy clean up!

Baking Sheet – Try to use a large baking sheet so you can plenty of room for the galette.

Ingredient List:

  • Blueberries – you can use fresh or frozen blueberries for this recipe! However, if you use frozen, you might want to add a teaspoon more of cornstarch, as there is more liquid with frozen blueberries! 
  • Sugar
  • Cornstarch
  • Lemon Zest
  • Pie Crust
  • Large Egg
  • Sliced Almonds
  • Vanilla Extract

Step by Step Instructions:

Step 1. Add sugar and lemon zest to a bowl. Mix together.

Step 2. In a medium bowl, combine blueberries, sugar, cornstarch, vanilla, and sugar

Step 3: Roll out pie crust onto a piece of parchment paper. Add blueberry mixture to the middle. 

Step 4. Roll up the edges of the dough. Then brush the egg wash to the edges before adding almond slices. Bake on a prepared baking sheet. 

Storage Instructions:

Cover with plastic wrap and leave at room temperature for about 2-3 days. Or you can store in the fridge for 3-4 days! If you are going to freeze it, make sure you wrap it tightly in plastic wrap before freezing!

Helpful Tips and Tricks

If you want to make this recipe even easier, you can use store-bought blueberry filling instead of making your own! 

Since this is lemon season, you can substitute the vanilla extract for a squeeze of lemon juice! That will really bump up the lemon flavor! 

Don’t forget to add a large scoop of ice cream or a little whipped cream to the top! Or my personal favorite, add a bit of both! There’s no rules here!

Easy Almond Blueberry Galette Recipe with Lemon

  • Parchment Paper
  • Baking Sheet
  • Large Bowl

Ingredients

  • 1 Store-Bought Pie Dough
  • 2 cups Blueberries fresh or frozen
  • 2 tablespoons Sugar
  • 1 tablespoon Lemon Zest
  • 1/2 tablespoon Cornstarch
  • 1 teaspoon Vanilla
  • 1 Egg
  • 1/2 cup Almonds sliced

Instructions

  • Preheat oven to 375 degrees.
  • In a small bowl, mix together sugar and lemon zest.
    2 tablespoons Sugar, 1 tablespoon Lemon Zest
  • In a bowl, combine blueberries, cornstarch, and vanilla. Then pour in sugar mixture.
    2 cups Blueberries, 1/2 tablespoon Cornstarch, 1 teaspoon Vanilla
  • Mix together and set aside.
  • Roll out the pie dough to roughly 11-inches wide.
    1 Store-Bought Pie Dough
  • Add the blueberry mixture to the pie dough leaving a 2-inch wide border.
  • Gently, fold the edges of the pie dough up and over the blueberries. Pressing gently to seal.
  • Make an egg wash combining one egg with a splash of water. Brush the egg wash around the edges of the pie dough.
    1 Egg
  • Sprinkle a few almond on top, pressing gently so they stick to the egg wash.
    1/2 cup Almonds sliced
  • Place in the oven to bake for about 45 minutes to 1 hour.
  • Let cool slightly and serve!
