I love a classic soft peanut butter cookie, but there’s nothing better than the chocolate peanut butter combination of these cookies! It’s perfect for a crowd or just to enjoy all by yourself! The peanut butter cookie dough is delicious all by itself, but fresh and warm from the oven, it’s even better! 

To Stuff or Not to Stuff

When it comes to these cookies, there are two options: you can either stuff the Oreo inside the cookie dough, or you chop up the Oreo into little pieces and add in into the cookie dough before baking! 

I like to stuff these cookies with the Oreos because from the outside it just looks like a normal peanut butter cookie, but when you bite into it you get the crunch from the Oreo! It’s the best cookie surprise!

Additions and Substitutions

I love this Peanut Butter Oreo Cookie recipe so much, but here are a few ways to really spice up this recipe! 

Crunchy Topping – Add a little something to the top of these cookies to add a bit of crunch. This can be chopped nuts, peanut butter chips, or Reese’s pieces.

Extra Chocolate – You can also top these cookies with some chocolate chips or chopped up peanut butter cups to add a little extra sweetness to this recipe! 

Please keep in mind, if you use natural peanut butter, there could be extra oils in it so you might have to add a tablespoon or two of flour! 

Equipment Needed:

Hand Mixer – I like to use an electric hand mixer to mix everything together, but you can also add all the ingredients to the bowl of a stand mixer with the paddle attachment! Be sure to scrape down the sides of the bowl to make sure everything gets incorporated! 

Large Bowl – Because I like to use a hand mixer to mix my ingredients, I prefer to use a large bowl to mix everything! 

Baking Sheet – Use a large cookie sheet so these cookies have plenty of room to bake in the oven! They don’t spread too much, but I like to give these cookies about 2 inches of space in between them! 

Parchment Paper – This helps prevent any of the cookies from sticking to the tray after baking! 

Cookie Scoop – I prefer to use a medium cookie scoop, but you can also use a large cookie scoop if you wanted to make these really big cookies! Please note that you might have to adjust the cooking time!

Ingredient List:

  • Butter
  • Peanut Butter
  • brown sugar
  • Sugar
  • Large Egg
  • Vanilla Extract
  • all Purpose Flour
  • Baking Powder

Step by Step Instructions:

Step 1. In a bowl, mix together peanut butter and butter, with sugar and brown sugar. 

Step 2. Then add in egg and vanilla extract. 

Step 3: Mix in the dry ingredients to the wet ingredients. 

Step 4. Scoop out cookie dough, then flatten before place an Oreo in the middle. Place on a parchment lined baking sheet before baking!

Storage Instructions:

You can store these cookies in an airtight container at room temperature for about 4-5 days! If you would like to freeze them, I recommend scooping out cookie dough balls, and then placing them on wax paper or parchment paper to freeze. Once they’re fully frozen, you can add them to a freezer bag and store! When you’re ready to enjoy these peanut butter Oreo cookies, let them thaw at room temperature for about 30 minutes before baking according to the recipe below!

Ingredients

  • 1 stick Butter room temperature
  • 1/2 cup Peanut Butter
  • 1/2 cup Brown Sugar packed
  • 1/2 cup Sugar + 1/4 sugar set aside
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups Flour
  • 1 teaspoon Baking Powder
  • 12 Chocolate Sandwich Cookies

Instructions

  • Preheat the oven to 350 degrees.
  • Cream together butter and peanut butter.
    1 stick Butter room temperature, 1/2 cup Peanut Butter
  • Then, add in brown sugar and sugar.
    1/2 cup Brown Sugar packed, 1/2 cup Sugar + 1/4 sugar set aside
  • After the sugar has been fully incorporated, add in the egg and vanilla extract.
    1 Egg, 1 teaspoon Vanilla Extract
  • Then add in flour and baking powder.
    1 1/2 cups Flour, 1 teaspoon Baking Powder
  • Scoop out cookie dough and flatten into a disc. Put one chocolate sandwich cookie in the middle and wrap the cookie dough completely around the cookie.
    12 Chocolate Sandwich Cookies
  • Roll cookie dough into a ball and then roll in extra sugar. Place on the baking sheet, gently press the cookie dough flat and use the back of a fork to make a grid pattern on the top.
    1/2 cup Sugar + 1/4 sugar set aside
  • Bake in a preheated oven for about 14 minutes.
  • Let cool slightly and enjoy!
