Whenever I think of the classic bakery style muffins, I picture the large perfect muffin top on each muffin! It’s basically the best part of the muffin! I have a few tips and tricks to get the perfect rise on your muffin!
- If you have time, let the batter rest for 30 minutes to an hour in the fridge to help get a better rise on these muffins!
- Start the oven off at a higher temperature for five minutes, then reduce the heat and bake for the remainder of the time!
- Leave an empty muffin tin in between each muffin to allow the air of the oven to circulate around each muffin to help them rise!

Substitutions and Additions:
These easy Cinnamon Oatmeal Muffins are the perfect way to start your day, but I have a few different ways to spice up these muffins!
Add Some Crunch: Feel free to add your favorite type of nut to this muffin recipe to add a bit of crunch to the soft fluffy muffins. From peanuts, to walnuts, or even hazelnuts could work here!
Seasonal Spice: With the holidays coming up, you could really enhance these muffins by adding in pumpkin spice, nutmeg, or even some maple syrup to really add some warm depth to these muffins!
Fruit: Add in some blueberries to turn these in Blueberry Oatmeal Muffins! Or you could add in another type of berry, mashed bananas or applesauce as well!
Chocolate Chips: For an extra bit of sweetness, you can stir in some chocolate chips to muffin batter! I think dark chocolate chips would pair perfectly with the cinnamon flavor!

Glass Mixing Bowls – For this recipe, I like to use a set of glass mixing bowls, so I can use a medium bowl for the streusel topping and then a large mixing bowl for the muffin batter! I have my favorite set linked below!
Muffin Tin – Using a muffin pan is crucial to this recipe to get the perfect shaped muffins! You can use muffin cups to make sure that the muffins pop right out after baking!
Cookie Scoop – I like to use a large cookie scoop when scooping out the muffins! It helps to make sure each muffin is the same size and makes the scooping process a bit cleaner! You could also use a large spoon as well or even a 1/4 cup measure!

Step by Step Instructions:

Step 1. In a large bowl, add oil, brown sugar, and sugar. Mix together before adding in eggs, Greek yogurt, and vanilla extract.

Step 2. Then mix together the dry ingredients with the wet ingredients.

Step 3: Use a large cookie scoop to scoop the muffin batter into muffin liners.

Step 4. Then add a generous sprinkle of streusel to the top of each muffin.
Storage Instructions:
I like to store these muffins in an airtight container at room temperature for about 3-4 days! If you are going to freeze them, let them cool completely before wrapping in plastic wrap and storing in a freezer-safe bag!

Helpful Tips and Tricks
You can really use whatever type of oats you have on hand! I prefer using steal cut oats, because I like the texture that they add to the muffins, but I’ve also tested this recipe using quick cooking oats as well, and it works too!
Use whatever flavorless oil you like best, from vegetable oil, to coconut oil, you can really use whatever! Just make sure it doesn’t have a flavor that could change the flavor of the muffins!

Equipment
- Muffin Pan
- Large Cookie Scoop
Ingredients
- 1/2 cup Oil
- 1/2 cup Brown Sugar
- 1/2 cup Sugar
- 2 Eggs
- 1/3 cup Greek Yogurt
- 1 teaspoon Vanilla
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1 1/2 cups Flour
- 1 cup Oats
Streusel Topping:
- 4 tablespoons Butter melted
- 1/2 cup Flour
- 2/3 cup Oats
- 1/3 cup Brown Sugar
- 2 teaspoons Cinnamon
Instructions
- Preheat oven to 400 degrees.
- In a large bowl, add in oil, brown sugar, and sugar. Stir everything together.1/2 cup Oil, 1/2 cup Brown Sugar, 1/2 cup Sugar
- Add in eggs, yogurt and vanilla. Mix together.2 Eggs, 1/3 cup Greek Yogurt, 1 teaspoon Vanilla
- To the wet ingredients, add in flour, oats, cinnamon, baking soda, and baking powder. Stir everything together.1 teaspoon Baking Powder, 1/2 teaspoon Baking Soda, 1 teaspoon Cinnamon, 1 1/2 cups Flour, 1 cup Oats
- While the oven is preheating, make the streusel topping.
- Melt butter in a microwave-safe bowl in 30 second increments until it’s mostly melted. There will still be some small chunks of butter and that’s okay!4 tablespoons Butter melted
- Then mix in flour, oats, brown sugar, and cinnamon.1/2 cup Flour, 2/3 cup Oats, 1/3 cup Brown Sugar, 2 teaspoons Cinnamon
- Set streusel aside. Fill up muffin tins using a large cookie scoop. Then top with some streusel.
- Bake at 400 for 5 minutes, then reduce the heat to 350 and bake for another 15 minutes.
- Let cool slightly, then serve and enjoy!
