What is Biscotti
Biscotti is a traditional Italian cookie that are twice baked to get their classic crunchy texture! To make a biscotti, you shape the dough into a long oval log and then bake for about 25 minutes. Then you cut the biscotti logs into 1 inch slices, and then bake them again!
This is how you get their classic crispy texture! They’re perfect with hot cup of coffee or tea! I love them for afternoon snack, especially once the weather gets cooler!

Substitutions and Additions:
These Chocolate Almond Biscotti are delicious all on their own, but I have a few different additions to spice up these cookies!
Types of Chocolate: You can really experiment with whatever type of chocolate chips you like best, from semi-sweet or even white chocolate would be delicious!
Types of Nuts: You can add hazelnuts, pistachios, or even walnuts to this crunchy cookies! IF you wanted to up the almond flavor, you could add a few drops of almond extract to these cookies!

Step by Step Instructions:

Step 1. In a large mixing bowl, combine butter and sugar. Mix together before adding eggs, almond and vanilla extract.

Step 2. Add the dry ingredients to the wet ingredients and mix together before adding in the almonds.

Step 3: Divide the dough in half and shape each half into a large log about 3 inches wide. Place on a prepared baking sheet.

Step 4. After the first bake, cut into thick slices and lay cut side down. Bake for another 15 minutes flipping halfway.
Storage Instructions:
Store any biscotti in an airtight container at room temperature for about 4-5 days!

Equipment
- Electric Mixer
- Baking Sheeet
Ingredients
- 5 tablespoons Butter room temperature
- 3/4 cup Sugar
- 1 teaspoon Vanilla Extract
- 2 Eggs
- 2 cups Flour
- 1 teaspoon Baking Powder
- 1 cup Chopped Almonds
- 1 cup Dark Chocolate melted
Instructions
- Preheat oven to 350 degrees.
- In a bowl, combine butter and sugar. Mix until combined.5 tablespoons Butter, 3/4 cup Sugar
- Then add in eggs and vanilla extract.2 Eggs, 1 teaspoon Vanilla Extract
- Once the wet ingredients have been fully mixed together, add in flour and baking powder.2 cups Flour, 1 teaspoon Baking Powder
- Stir together and add in chopped almonds.1 cup Chopped Almonds
- Shape into two logs about 3 inches wide. Place on a parchment lined baking sheet and bake for 25 minutes.
- When the 25 minutes is up, cut into thick 1 inch slices, and lay flat. Bake for another 15 minutes, flipping them halfway.
