Substitutions and Additions:
These Pumpkin Bars are so delicious with the creamy pumpkin filling and crispy graham cracker crumbs. I have a few additions to make these bars extra delicious!
Add a Topping: From homemade whipped cream, to ice cream, I always feel like pumpkin pie needs a little extra something-something for the top. You can add a crumble topping or a sprinkle of cinnamon sugar to the top of the pumpkin pie before baking to make it extra delicious!
Swap The Graham Crackers: You can really use any cracker or cookie for the base of this crust! I’ve head of ginger snap cookies or gingerbread cookies that could make this crust out of this world and would pair perfectly with the pumpkin flavor!
Add Some Alcohol: A little splash of bourbon in the pie would be extra delicious and a great way to warm up all your guests!

Equipment Needed:
Glass Mixing Bowls: Since this recipe comes with two parts: the graham cracker crust and the pumpkin pie filling, I like to use my set of glass mixing bowls! That way I can use the large bowl for the pumpkin filling and a smaller bowl for the graham cracker crust!
Rubber Spatula/Whisk: For this recipe, I like to mix everything together using a whisk, then go back in with a rubber spatula to really scrape down the sides of the bowl! If you want, you can use a hand mixer to make everything just a bit quicker or a stand mixer with the paddle attachment!
Square Pan: To make these into bars, I use an 8 inch square pan! You can also use a larger rectangular pan, but please note that the bars will be a lot thinner if you do! If you want the traditional pie shape, you can make this whole recipe in a pie pan!

Step by Step Instructions:

Step 1. In a medium bowl, mix together graham cracker crumbs, melted butter, and sugar. Stir everything together.

Step 2. In a parchment lined pan, add the graham cracker mixture and press into the pan. Bake for about 8-10 minutes.

Step 3: While the crust bakes, mix together the remainder of the ingredients in a large mixing bowl.

Step 4. Pour pumpkin mixture over baked graham cracker pie crust. Bake until the center jiggles just slightly.
Storage Instructions:
I recommend storing these bars in an airtight container in the fridge! If you want to make them ahead of time, I would just leave them in the pan they baked in and cover with plastic wrap or aluminum foil. Then when you’re ready to serve them, you can slice them up, add whipped cream and a sprinkle of cinnamon!

Helpful Tips and Tricks
If you can’t find graham cracker crumbs, just take full sheets of graham crackers, put them in a freezer bag (or any bag that seals tightly) and use a rolling pin to crush them up! You could also toss them into a food processor to really blend it up quickly!
Be sure to buy 100% pumpkin puree and not pumpkin pie filling at the store! Pumpkin Pie filling already has the sugar and other ingredients added in, which we don’t want for these bars!
Please note that this recipe can also be made in a regular pie crust as well!

Easy Pumpkin Pie Bars with Graham Cracker Crust

Equipment
- 8 inch Square Pan
- Glass Bowls
Ingredients
- 1 can Pumpkin Puree
- 3/4 cup Evaporated Milk
- 1/2 cup Sugar
- 1/4 cup Brown sugar
- 2 Eggs
- 1-1/2 teaspoons Pumpkin Pie Spice
- 1 teaspoon Vanilla
- A pinch Salt
Crust:
- 1 1/2 cup Graham Cracker Crumbs
- 6 tablespoons Butter melted
- 1/4 cup Sugar
Instructions
- Preheat oven to 350 degrees.
- In a bowl, combine graham cracker crumbs, sugar, and melted butter.1 1/2 cup Graham Cracker Crumbs, 6 tablespoons Butter melted, 1/4 cup Sugar
- Stir everything together, then pack into the bottom of parchment-lined square pan!
- Bake in the oven for about 8 minutes.
- In a bowl, add pumpkin puree, sugar, and brown sugar. Stir together.1 can Pumpkin Puree, 1/2 cup Sugar, 1/4 cup Brown sugar
- Add in two eggs, vanilla, pumpkin pie spice, and salt.2 Eggs, 1-1/2 teaspoons Pumpkin Pie Spice, 1 teaspoon Vanilla, A pinch Salt
- Then add in evaporated milk. Whisk until the mixture is smooth and creamy.3/4 cup Evaporated Milk
- Pour into graham cracker crust.
- Place back in the oven for 45 minutes to an hour!
- When the pie bars are done, let cool at room temperature before putting in the fridge to chill for 2 hours.
- Then slice into bars and dollop with whipped cream!
