Substitutions and Additions:
This Maple Pumpkin Granola is delicious on top of smoothie bowls, yogurt, or even to eat all by itself! Here are a few ways to customize this granola!
Types of Nuts: You can use raw pumpkin seeds, pecans, almonds, or any kind of nut combination! I love the extra crunch and protein they add to this granola!
Dried Fruit: From dried cranberries, to apricots, to blueberries, you can really add a ton of different flavors into this! If you wanted, you can add in some freeze-dried fruit after the granola is done baking as well!
Healthy Fats: If you wanted to make this a bit healthier, you can use coconut oil instead of butter! I like the flavor butter adds, but this is up to you!
Extra Sweetness: You can substitute the honey and maple syrup for agave, brown sugar, coconut sugar, or another combination! If you want to add extra pops of sweetness throughout you can add in some mini chocolate chips as well!

Equipment Needed:
Medium Bowl – I like to use a medium bowl to pour the oats into! This helps allow you to really scrape down the edges of the bowl to make sure everything is coated in the butter mixture!
Sheet Pan – To make sure you can spread the granola in a single layer, I like to use a large sheet pan to give the granola plenty of room to bake!
Parchment Pan – Parchment paper makes for an easy clean up! I like to use the parchment paper to funnel the granola right into a container!

Step by Step Instructions:

Step 1. In a small saucepan, melt together butter, honey, maple syrup, vanilla extract, and maple extract. Stir everything together, before adding in the spices.

Step 2. In a medium bowl, add the oats, chia seeds, Pepitas, cranberries, and apricots.

Step 3: Pour the wet ingredients over the oat mixture.

Step 4. Spread out on a sheet pan and bake, flipping the mixture halfway through!
Storage Instructions:
You can store the granola in an airtight container at room temperature for about two weeks!

Helpful Tips and Tricks
I like to leave some of the granola into chunks instead of breaking it all up! It might still seem soft when you pull it out of the oven, but it will firm up as it sets!

Ingredients
- 2 tablespoons Butter
- 2 tablespoons Honey
- 3 tablespoons Maple Syrup
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Maple Extract
- 1/2 teaspoon Cinnamon
- 1 teaspoon Pumpkin Pie Spice
- 1/4 teaspoon Clove
- 1/4 teaspoon Nutmeg
- 2 cups Rolled oats
- 1/4 cup Chia Seeds
- 1/3 cup Pepitas
- 1/2 cup Dried Cranberries
- 1/2 cup Dried Apricots chopped
Instructions
- Preheat oven to 350 degrees.
- In a small saucepan, melt the butter with honey, vanilla extract, maple syrup, and maple extract2 tablespoons Butter, 2 tablespoons Honey, 3 tablespoons Maple Syrup, 1 teaspoon Vanilla Extract, 1/2 teaspoon Maple Extract

- In a large bowl, mix together rolled oats, chia seeds, cranberries, chopped dried apricots, and pepitas.2 cups Rolled oats, 1/4 cup Chia Seeds, 1/3 cup Pepitas, 1/2 cup Dried Cranberries, 1/2 cup Dried Apricots chopped
- Pour over butter mixture and mix together.
- Then pour on a baking sheet and bake for about 10 minutes, then toss gently and put back in the oven for another 10 minutes.
