This Easy Vegetarian Ramen with Tofu and Mushrooms is going to be your new favorite weeknight dinner! This recipe comes together in 30 minutes and is so easy to make! It's full of garlic and scallion flavor that warms up the soul! It's a weekly dinner in my house for good reason!
Getting a big bowl of ramen from my local Asian restaurant is one of my favorite things; it's hearty and full of good flavor!
I decided to try my hand and making my own version and have tried a few different recipes before I landed on this Easy Vegetarian Ramen with Tofu! I wanted it to be full of flavor but still super easy to make!
One thing that I love about this recipe is that you can change out whatever veggies you would like best! If you don't like mushrooms, you could add bok choy, or another kind of vegetable!

Step-By-Step Instructions
- Step 1: Chop up the mushrooms, tofu, and scallions. Set the scallion greens aside.
- Step 2: Over medium heat, saute ginger, garlic, and scallions.
- Step 3: Add mushrooms and tofu to the pan.
- Step 4: Then add in broth and ramen and cook until the noodles are ready!
Hint: If you like a spicy kick, you add some red chili flakes as well!
Variations
If you're looking for a few more variations of this Vegetarian Ramen with Mushrooms, no worries! Here are a few more variations to try out!
- Spicy - add chili pepper flakes to the garlic and scallions to spice up the broth!
- Jammy Egg - right before serving add a jammy egg to the top of the ramen so the yolk creates a creamy broth!
- Dumplings - if you wanted a little more protein in your ramen, you could add some veggie or pork dumplings to the broth and let them cook as well!
Equipment
Luckily this recipe don't require any fancy equipment! The only thing I recommend would be two cutting boards! I like to lay a towel on top of one cutting board, place the tofu down and wrap the towel over it. Then I place the other cutting board on top, followed by something heavy, like cans or jars, to help weigh down the tofu!
I like to use the two cutting boards because it helps create a flat surface on top of the tofu.
Storage
I like to store this soup in an airtight container in the fridge for about 2-3 days!
If you want to freeze this soup, I recommend leaving the noodles out, and letting the broth and veggies cool completely before freezing in an airtight container. Then, when you're ready to eat the ramen, you can add the noodles when you're heating it up!
Top tip
I like to cut my tofu into thick slices, then press down for about 15 minutes. I found cutting it into slices helped the moisture seep out more!

You can use bone broth, chicken broth, beef broth, whichever broth you find to be the most flavorful with this recipe works!
Absolutely! You can add whatever veggies you like best in this recipe! Bok choy, dumplings, spinach, you can get creative!

Easy Vegetarian Ramen Recipe with Tofu and Mushroom
Ingredients
- 1 tablespoon Sesame oil
- 2 teaspoons Ginger
- 3 cloves Garlic
- 2 Scallions chopped
- 1 package Tofu
- 1 carton Shiitake Mushrooms Sliced
- 1 tablespoon Soy Sauce
- 4 cups Vegetable Broth
- 1 cup Water
- 2 packages Ramen Noodles
- 1 tablespoon Chili Oil garnish
Instructions
- Remove tofu from package and cover with paper towels. Place a cutting board on top of the tofu and place something heavy on top, like a pot, or some heavy cans. Let the tofu press for about 15 minutes.1 package Tofu
- Chop scallions and set aside the green tops for garnish.2 Scallions
- In a pan over medium heat, add sesame oil, ginger, garlic, and scallion whites. Let cook for about 5 minutes.1 tablespoon Sesame oil, 2 teaspoons Ginger, 3 cloves Garlic
- Chop tofu into 1-inch cubes and add to the pot with sliced mushrooms. Let sautee for about 2-3 minutes.1 carton Shiitake Mushrooms
- Add in soy sauce, vegetable broth, and water. Bring to a boil.1 tablespoon Soy Sauce, 4 cups Vegetable Broth, 1 cup Water
- Add in ramen noodles and coo for about 5 minutes until the noodles are ready!2 packages Ramen Noodles
- Add to a bowl and garnish with scallion greens and a drizzle of chili oil! Enjoy!1 tablespoon Chili Oil
