These Peanut Butter Chocolate Cracker Cookies are inspired by a no-bake cookie treat I used to make when I was younger! Flavored with peanut butter, chocolate, and a crunchy butter cracker, these cookies are as easy to make as they are delicious! Holiday cookie approved!

I love adding unexpected ingredients into classic cookie combinations! (Hello, Movie Theater Popcorn Cookies, I'm talking about you here.)

These Peanut Butter Chocolate Cracker Cookies are full of holiday cheer with creamy peanut butter, rich chocolate and an unexpected cracker crunch! They're easy to make and perfect for every party!

Peanut Butter Cracker Cookie

So this recipe is inspired by a no-bake peanut butter cracker cookie that I used to make when I was younger!

If no-bake recipes are more your style, this recipe is super easy! You just need: crackers, peanut butter, chocolate chips, and 1 teaspoon of coconut oil. Spread a thin layer of peanut butter in between two crackers then sandwich them together and freeze. Then melt chocolate chips and coconut oil in the microwave in 30-second increments until fully melted. Dip frozen cracker sandwiches in chocolate and let harden!

It's a really simple recipe that I make almost every holiday season!

Peanut Butter Options

For this recipe, I used creamy peanut butter! I think it mixes into the butter and sugar mixture the easiest! However, you can use whatever nut butter you prefer! Try to avoid one that has a lot of extra oil or liquid as that can throw off the ratios!

Ingredients

  • Flour
  • Baking Powder
  • Butter
  • Peanut Butter
  • Sugar
  • Brown Sugar
  • Egg
  • Vanilla Extract
  • Dark Chocolate
  • Butter Crackers

Step-By-Step Instructions

  1. Step 1: Mix together butter and peanut butter.
  1. Step 2: Then add in both sugars.
  1. Step 3: Add in egg and vanilla.
  1. Step 4: Add in dry ingredients.
  1. Step 5: Stir in chocolate and crackers.
  1. Step 6: Then scoop onto a parchment-lined baking sheet.

Hint: I like to gently press the top of the cookies down, then add some more crackers and chocolate to the top.

Variations and Substitutions

These Peanut Butter Chocolate Cracker Cookies are delicious all on their own, but here are a few ways to spice them up!

  • Chopped Peanuts - enhance that peanut butter flavor with adding a few extra chopped pecans!
  • Chocolate Crackers - if you can find chocolate covered crackers this holiday season, you can use those instead!
  • Peppermint Crunch - add a few crushed peppermints to the top for a holiday twist!

Equipment

Baking Sheet - For this recipe, I like to use a large baking sheet to fit the cookies on! These don't spread out too much, but I like to give them 2 inches of space to bake evenly!

Cookie Scoop - I like to use a 2 ounce cookie scoop to create nice and thick cookies! This is usually the medium cookie scoop if you have a set of three! I have a similar set to the one I use linked here!

Top tip

Add a few chopped crackers to the top with a little piece of chocolate to make these cookies look like their straight from your local bakery!

Storage

  • Room Temperature - store in an airtight container for about 3-4 days!
  • Freezer - store the scooped cookie dough in an airtight bag for about 3-4 months! When you're ready to bake, let thaw in the fridge and then follow recipe directions!

FAQ

Can I use any cracker?

Absolutely! You just want something that's going to add a nice crunch, so this can be crackers, pretzels, or even cereal!

Should I use dark chocolate?

I prefer dark chocolate with this recipe, but you can also use semi-sweet or milk chocolate!

Can I use chocolate chips instead?

Yes! If you want to skip chopping the chocolate, you can definitely use chocolate chips instead.

Equipment

  • 2 oz Cookie Scoop
  • Baking Sheet
  • Parchment Paper

Ingredients
  

  • 1 ½ cups Flour
  • 1 teaspoon Baking Powder
  • 1 stick Butter room temperature
  • ½ cup Peanut Butter
  • ½ cup Sugar
  • ½ cup Brown Sugar packed
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 4 ounces Dark Chocolate chopped
  • 8 Butter Crackers crushed

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a plastic bag, add in crackers. Using a rolling pip or other heavy object, gently crush the crackers to get different sized chunks. Set aside.

  • Then chop up the chocolate bar into small pieces, no bigger than a dime!
    4 ounces Dark Chocolate
  • Cream together butter and peanut butter.
    1 stick Butter room temperature, ½ cup Peanut Butter
  • Then, add in brown sugar and sugar.
    ½ cup Sugar, ½ cup Brown Sugar packed
  • After the sugar has been fully incorporated, add in the egg and vanilla extract.
    1 Egg, 1 teaspoon Vanilla Extract
  • Then add in flour and baking powder.
    1 ½ cups Flour, 1 teaspoon Baking Powder
  • Once the mixture is almost mixed together, add in chocolate chunks and crushed crackers.
  • Using a medium cookie scoop, scoop out the dough onto a parchment lined baking sheet.
  • Bake for about 15 minutes when the edges are golden brown.
  • Let cool and enjoy!
