White Chocolate Macadamia Nut Cookies

Soft and chewy White Chocolate Macadamia Nut Cookies are even better than you thought! This recipe calls for browned butter, vanilla, and a combination of brown and white sugar to create the ultimate chewy cookie!

What's all inside Macadamia Nut Cookies?

If you've never had White Chocolate Macadamia Nut Cookies, you're in luck because this recipe is so easy to make and the combination of macadamia nut and white chocolate is amazing!

This recipe starts off with browned butter which is one my favorite ways to enhance a cookie; the nutty caramel flavor of browned butter is absolutely addicting. Then, a combination of white and brown sugar (which you can read more about that below) combined with vanilla gives these cookies the perfect amount of sweetness.

This is a thick and chewy cookie that just melts in your mouth. The middle is soft and just perfectly set while the edges get nice and crispy. It's a match made in cookie heaven.

Double Sugar, Double Delicious

In case you're wondering if you really need two types of sugar in one cookie recipe, the answer in short is: yes, you do!

Sugar, while it does add sweetness, also contributes to the texture of a cookie. Cookies made with just plain granulated sugar tend to be crispier. Cookies made with all brown sugar end up being chewier because of the molasses in the brown sugar.

Adding both allows the cookie to get the crispy edges of the sugar while also contributing to the chewiness of the cookie with the brown sugar. Most of my cookie recipes will include both sugar and brown sugar to create the perfect cookie texture (in my opinion, of course!).

White Chocolate in Cookies

White chocolate and macadamia nuts is a classic cookie combination. I love the soft nuttiness of the macadamia nut paired with the sweetness of the white chocolate.

If you don't like white chocolate, I would suggest just leaving these cookies without any chocolate and just leaving the macadamia nuts in the cookie. Macadamia nuts have a very soft, subtle flavor that I would worry another chocolate like a dark chocolate would overpower.

Of course, this is just my suggestion. If you happen to love dark chocolate and macadamia nuts, add it in! There's no chocolate judgement here!

Equipment

  • 2 oz Cookie Scoop
  • Medium Saucepan
  • Baking Sheet

Ingredients
  

  • 10 tablespoons Butter
  • ½ cup Sugar
  • ½ cup Brown Sugar packed
  • 1 Egg
  • 1 teaspoon Vanilla Extract
  • 1 ¾ cups Flour
  • ½ teaspoon Baking Powder
  • 1 teaspoon Cornstarch
  • ½ cup White Chocolate Chips
  • ½ cup Macadamia Nuts

Instructions
 

  • Add butter to a saucepan over medium heat. Let the butter melt stirring occasionally, about 5 minutes.
    10 tablespoons Butter
  • Then the butter will begin to foam, stir every 30 seconds. Make sure to break up the foam so you can see the butter changing colors. When the butter is a deep rich amber color, remove from heat and pour into a bowl. Let cool for about 5-7 minutes.
  • In a large bowl, mix together butter, sugar, and brown sugar. Mix until everything is smooth and creamy.
    ½ cup Sugar, ½ cup Brown Sugar packed
  • Add in one egg, and vanilla extract. Mix together.
    1 Egg, 1 teaspoon Vanilla Extract
  • Then, add in flour, cornstarch, and baking powder. On a low speed, mix all the dry ingredients to the dough.
    1 ¾ cups Flour, ½ teaspoon Baking Powder, 1 teaspoon Cornstarch
  • Chop macadamia nuts into small pieces, then add to the dough. Pour in white chocolate chips and mix together with a spatula, making sure to scrape the bottom of the bowl to get everything mixed together.
    ½ cup White Chocolate Chips, ½ cup Macadamia Nuts
  • Let dough chill for 30 minutes.
  • Preheat oven to 350 degrees.
  • Use a medium cookie scoop to scoop out the cookie dough and place on a parchment-lined baking sheet.
  • Bake for about 12-14 minutes, the centers will still be slightly gooey.
  • Let cool slightly, and enjoy!
