My husband loves grabbing a ham and cheese croissant whenever we get morning coffee! (I usually go for the sweet options, but I guess that’s why we work so well together!) It’s a perfect way to get a delicious breakfast with a bit of protein packed in!
For this recipe, I used a black pepper ham from the local deli at my grocery store and paired that with a sharp cheddar! You can really use whatever flavor combination you like best!

Puff pastry is a butter dough that’s made through the process of lamination, which is layer butter throughout the dough using a folding method. The butter gets folding through the dough layer by layer. It’s a long process, which is why buying a store-bought version my preferred method! The technique to making puff pastry is similar to croissants, which is why they have a similar flakey finish!

- Step 1: Add a smear of honey mustard to the puff pastry.

- Step 2: Then add in ham.

- Step 3: Add a piece of cheese to the top, then egg wash the sides.

- Step 4: Fold sides over and top with everything bagel seasoning.
Hint: Be sure to egg wash the top of the puff pastry as well so the seasoning will stick to it!

Pastry Brush – This is really great to use to brush the egg wash onto the puff pastry! I use it when it comes to puff pastry and pie crust! It’s easy way to brush on the egg wash! Since this is a small edge, you can also just use your finger!
Rolling Pin – I like to roll out the puff pastry just slightly, so it’s a bit thinner! This helps the puff pastry cook a bit faster! If you don’t have a rolling pin, you can a large, cylinder object, like a bottle of wine, for example!

You can really get creative with these and add whatever flavors you like best! From different kinds of deli meat, to vegetables, the options are endless with this breakfast pastry!

Storage
- Refrigerator – store in an airtight container for about 2-3 days. You can reheat them in the oven at 350 degrees or in the microwave.
- Freezer – wrap securely in plastic wrap, then freeze for 1 months. Let thaw at room temperature for about 30 minutes, then reheat in the oven at 350 degrees for about 20 minutes, or until fully warmed through!

Definitely! You can use gouda, cheddar, parmesan, any cheese will really work, but I would stay away from a soft cheese, like a brie.

Ham and Cheese Breakfast Pastry Recipe (Puff Pastry)

Equipment
- Baking Sheet
- Pastry Brush
- Rolling Pin
Ingredients
- 1 package Puff Pastry
- 1 Egg
- 2 tablespoons Honey Mustard
- 12 slices Deli Ham
- 1/2 block White Cheddar Cheese
- 3 tablespoons Everything Bagel Seasoning
Instructions
- Preheat the oven to 400 degrees.
- Let puff pastry thaw at room temperature for 30 minutes.1 package Puff Pastry
- Roll out puff pastry with a rolling pin to seal the middle seams and flatten just slightly.
- Use a knife to cut into 6 rectangles. Turn the rectangle so it makes a diamond shape.
- In the middle of the turned rectangle, add a smear of honey mustard.2 tablespoons Honey Mustard
- Then add two pieces of ham into the middle of the rectangle, making sure to leave all the edges empty.12 slices Deli Ham
- Then add a piece of cheese in the middle.1/2 block White Cheddar Cheese
- Make an egg wash using the egg and a tablespoon of water. Brush along the edges of the rectangle. Then take the left corner of the puff pastry and fold it until the corner is right in the middle above the cheese. Then, fold the right corner on top of that. Press gently to seal everything together.1 Egg
- Brush the egg wash over the top parts of the puff pastry and generously sprinkle with the everything bagel seasoning!3 tablespoons Everything Bagel Seasoning
- Place on a parchment lined baking sheet and bake for about 15-18 minutes! The puff pastry should be golden brown!
- Let cool slightly and enjoy!
- I like to add a drizzle of honey to the top of these, but that's optional!
