Step-By-Step Instructions

  1. Step 1: Combine cream cheese, lemon zest, egg yolk, vanilla, and sugar. Mix together.
  1. Step 2: Cut puff pastry into rectangles, then swirl a dollop of the cream cheese mixture in the middle.
  1. Step 3: Add raspberries to the cream cheese.
  1. Step 4: After baking, add a few sprinkles of powdered sugar!

Hint: Make sure to let the cream cheese set at room temperature for about 30 minutes before you begin to mix everything together! This will help the cream cheese mixture whip together easier.

Variations

Lemon and Raspberry pair so perfectly together especially with that sweet lemon drizzle to go over the top of these pastries! Here are some other delicious pairings:

  • Peach - add a few thinly sliced peaches to the top and add a drizzle of honey for a peach and cream danish!
  • Lemon Squeeze - leave out of the fruit altogether and let the lemon sing! Swap out the vanilla extract for lemon extract and finish with the lemon drizzle!
  • Chocolate- leave out the lemon completely and add a few chocolate chips to the cream cheese mixture!

But I highly recommend the Lemon Blueberry variation of this pastry! Lemon and blueberry might be one of my favorite flavor combinations!

Equipment

I love the simplicity of this recipe! It's what takes this recipe from a lazy Sunday morning to a busy weekday morning! It's quick to throw together and you don't need any fancy equipment!

To make this recipe easy, I like to use a hand mixer to whip the ingredients together faster! However, if you let the cream cheese come to room temperature, you could probably just use a spatula, too.

Storage

These Cream Cheese Raspberry Danish don't last long in my household, but if you have a few leftover, here are some tips for storing:

Room Temperature - Seal in an airtight container for about 2 days!

Refrigerator - Seal in a covered airtight container for 3-4 days!

Freezer - Wrap individually with plastic wrap, then seal in a covered, airtight container for about 1 month.

Top tip

To make this recipe easier, make sure the puff pastry is thawed and the cream cheese is at room temperature! This helps roll out the puff pastry and fully mix together the cream cheese with the other ingredients!

FAQ

Can I use frozen raspberries?

For this recipe, I recommend using fresh raspberries, since frozen fruit can have extra liquid! If you can't find fresh raspberries, you can substitute with another berry or use raspberry jam!

Cheers!

Equipment

  • Baking Sheet

Ingredients

  • 8 ounces Cream Cheese room temperature
  • ½ teaspoon Vanilla Extract
  • ½ Lemons zested
  • 3 tablespoons Sugar
  • 1 tablespoon Heavy Cream
  • 2 Eggs
  • 1 Package Puff Pastry
  • 1 cup Raspberries

Instructions

  • Preheat oven to 400 degrees.
  • Let puff pastry sit at room temperature for about 30 minutes.
  • Combine cream cheese, lemon zest, sugar, heavy cream, vanilla and one egg yolk. Whip together until nice and fluffy.
8 ounces Cream Cheese room temperature, ½ teaspoon Vanilla Extract, ½ Lemons zested, 3 tablespoons Sugar, 1 tablespoon Heavy Cream, 2 Eggs
  • Roll out the puff pastry to roll out any seams in the dough. Cut into 6 even pieces.
    1 Package Puff Pastry
  • Using the backside of a knife, create a rectangle line about ½ inch from the edge of the puff pastry, without cutting all the way through! This helps the puff pastry puff up around the cream cheese!
  • Scoop a dollop of the cream cheese mixture into the middle of the pastry pieces. Then spread it out leaving a quarter inch border around the edges.
  • Add a few raspberries.
    1 cup Raspberries
  • Create an egg wash by mixing together one egg with a splash of water. Brush onto the edges of the puff pastry. Sprinkle with a little extra sugar.
  • Bake for about 15-18 minutes.
  • Enjoy!
