Substitutions and Additions:

These Chewy S’mores Granola Bars are the perfect combination of chewy granola and sweet s’mores flavors! Here are few more substitutions for this recipe: 

Add Nuts – Feel feel to add in whatever kind of nuts you like best, from pistachios to almonds, any nuts would work in this recipe! You would also get an extra little crunch as well! 

Graham Crackers – To complete the s’mores vibes, you can add in some crushed up grahams to this recipe as well! Sub out 1/2 cup of oats for 1/2 cup graham cracker pieces!

Nut Butter – Add in some peanut butter or almond butter to increase the chewy texture of these bars! 

Equipment Needed:

Saucepan: I like to use a small sauce pan to melt the mixture down! You can use a small skillet as well! Or just melt everything in the microwave!

Square Pan: I like to use a parchment-lined square pan for this recipe, but you can also use a 9×13 rectangular pan as well! Just know that they might be on the thinner side! 

Glass Bowls: I have a set of glass mixing bowls that I use all the time when I’m baking! I use a medium bowl for this recipe!

Ingredient List:

  • Old Fashioned Oats
  • Rice Cereal
  • Butter
  • Honey
  • Brown Sugar
  • Vanilla Extract
  • Mini Chocolate Chips
  • Dehydrated Mini Marshmallows

Step by Step Instructions:

Step 1. In a separate bowl, add old fashioned oats and rice cereal.

Step 2. In a small saucepan, melt butter, honey and brown sugar. Then add in vanilla extract. 

Step 3: Pour brown sugar over the oat mixture. Stir together. 

Step 4. Press the mixture into a square pan that’s been lined with parchment paper. Then sprinkle on mini marshmallow bits and mini chocolate chips! 

Storage Instructions:

I like to wrap these homemade granola bars in plastic wrap or parchment paper and store at room temperature for 3-4 days! You can also just store them in an airtight container as well!

Helpful Tips and Tricks

I like to use the dehydrated mini marshmallows because I like the slight crunch that they add to this recipe! If you can’t find them at your local grocery store or online, you can always use regular mini marshmallows! 

These Chewy S’mores bars are a great snack to enjoy on to go or whenever that sweet craving hits! With chewy oats and crunchy marshmallow bits, these chewy granola bars really have it all!

Homemade Chewy S’mores Granola Bars

These Homemade Chewy S’mores Granola Bars are the perfect after school snacks for kids of all ages, even the kids-at-heart! It’s a super easy recipe to throw together and makes a delicious chewy snack to enjoy any time!

Equipment

  • Sauce Pan
  • 8×8 Square Pan
  • Mixing Bowl

Ingredients

  • 3 cups Old Fashioned Oats
  • 1 cup Rice Cereal
  • 4 tablespoons Butter
  • 1/2 cup Honey
  • 1/2 cup Brown Sugar
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Mini Chocolate Chips
  • 1/2 cup Dehydrated Mini Marshmallows

Instructions

  • In a small saucepan, add butter, honey, and brown sugar. Turn the heat to medium low and let everything melt. The mixture will come to a slight boil and that's how you know it's ready!
    4 tablespoons Butter, 1/2 cup Honey, 1/2 cup Brown Sugar
  • In the meantime, in a bowl, mix together oats and rice cereal.
    3 cups Old Fashioned Oats, 1 cup Rice Cereal
  • Once the brown sugar mixture is melted and combined, remove from heat and add in vanilla extract.
    1 teaspoon Vanilla Extract
  • Then pour brown sugar mixture over the oats and cereal.
  • Stir everything until it's fully combined.
  • Press the mixture into an 8×8 square pan that's been lined with parchment paper.
  • Sprinkle chocolate chips and marshmallows over the top and gently press them into the mixture.
    1/2 cup Dehydrated Mini Marshmallows, 1/2 cup Mini Chocolate Chips
  • Place bars in the fridge to cool for about an hour.
  • Then cut into rectangle shapes and wrap in plastic wrap! Enjoy!
