Lemon Poppy Seed Macaroons

I am so excited for April! I had very big plans for April, however, life has definitely thrown everyone a curveball this year. Despite what may be going on around us, I am determined to still enjoy the happy Spring weather that April always brings!

Spring always seems like such a joyful season to me; all the birds are singing, the flowers are blooming, and even the slight buzz of bumblebees brings me joy! Spring is here, whether we have to enjoy it six feet apart or not!

One flavor that I always associate with spring is lemons! I mean, everything about a lemon screams spring. The color, the bright, zingy flavor, it’s pretty much spring in fruit form.

These lemon poppy seed macaroons are the perfect little dessert for spring! They are easy to make, super cute, and have a perfect lemon flavor that will cheer on any spring celebration! These would even be super adorable for any Easter dinner spread!

There are many macaroon recipes that include egg whites, which is definitely an option! I like this version because it’s really quick to throw together and pop into the oven! Save beating the egg whites for another day and use your extra time to hide some Easter eggs!


1 can of sweetened condensed milk

1-14 ounce bag of sweetened coconut

1 teaspoon of vanilla

The zest of 2 lemons

The juice of one lemon

1-2 tablespoons of poppy seeds

Preheat the oven to 325 degrees. In a bowl, combine the sweetened condensed milk, sweetened coconut, vanilla, the zest and the juice of the lemons, and the poppy seeds. Slowly stir to combine. Isn’t it so pretty to see the little tiny specks of the poppy seeds? After everything is combined, using a small cookie scoop, place little drops onto a silicone-lined baking sheet. You don’t have to worry about them spreading, so you can place them fairly close to each other.

Bake in the oven for about 20-25 minutes. The bottoms and the edges should turn a light golden brown!

Allow to cool slightly and store in an airtight container… if they make it that long!

I love how the edges are crispy and crunchy, but the inside is amazingly chewy! The lemon adds this bright, tanginess that complements the sweet coconut perfectly! I love the delicate little snap that you get from the poppy seed! Honestly, I love everything about this little macaroon bite!
