Happy Valentine’s Day!
What a special day to shower your loved ones in love, joy, and happiness!
I know some people have mixed feelings on Valentine’s Day, but I really enjoy the day to just tell people you love them. Plus I love any excuse to celebrate!
I had a few of my favorite gals over to celebrate a Galentine’s Party and it was so much fun! We had a bunch of little brunch items, like quiche (recipe coming soon!), chicken and waffles, heart-shaped potatoes, and, my personal favorite, strawberry scones!
I love scones of any variety: vanilla, blueberry, orange, chocolate chip, honestly, the choices are endless. They’re perfect to have with a warm cup of tea while relaxing in the morning.
A common problem with scones is that they can tend to dry out pretty quickly! I’ve never really had a problem with it, especially while drinking tea, but I knew that I wanted a recipe that I could make the night before and not worry about serving my friend dry little scone rocks. By adding the strawberries, they add a ton of extra moisture to the scone without impacting its structural integrity.
These are perfect for Valentine’s Day or any time you are need a delicious, sweet tea snack! Which ends up being almost every day for me!
2 cups of flour
4 tablespoons of sugar
1 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1 stick of butter
1/4 cup of Greek yogurt
1 teaspoon of vanilla extract
3 tablespoons of heavy cream
1/2 cup of chopped strawberries
2/3 cup of powdered sugar
2 tablespoons of Greek yogurt
A pinch of salt
1/2 teaspoon of vanilla extract
To begin, cube up one stick of butter and place it in the freezer for about 5 minutes.
Preheat the oven to 400 degrees.
In a food processor, add flour, sugar, baking powder, and salt. Mix once on low to incorporate all the ingredients.
Take the butter out of the freezer and place it into the food processor. Pulse together until the butter is in pea-sized pieces.
In a separate bowl, mix together one egg, yogurt, heavy cream, and vanilla. Whisk together.
Start incorporating the dry ingredients into the wet ingredient in 1/3 increments.
When you add the last of the dry ingredients, add in the chopped strawberries. Make sure to gently fold the mixture together so you don’t squish the strawberries!
When everything is fully mixed, take a large cookie scoop and place dollops of the scone mixture on a parchment-lined baking sheet.
Place in the oven for about 16-18 minutes. The tops will be golden brown and delicious!
While the scones are cooking, make the glaze. Combine powdered sugar, yogurt, vanilla, and salt. Stir until you which the thickness you like! I like mine to be about the consistency of honey.
When the scones come out of the oven and begin to cool, I like to take a teaspoon of the mixture and pour it directly in the middle of the scones. Because they are hot, it helps the glaze melt and cascade down the edges of the scones! Yum!
Top with a few sprinkles and you are good to go!

The strawberries add a lot of moisture to the scones so you don’t have to worry about any dryness in the scones, so these are the perfect treat to make ahead for any brunches, breakfasts, or coffee dates in your future!
