What is a Chocolate Chip Brownie Cookie?
These Chocolate Chip Brownie Cookies are my new favorite dessert! I love when two classic desserts get combined into one delicious cookie! It's like the best of both worlds!
This starts out as my classic vanilla cookie base but instead of just adding chocolate chunks, I chop up little pieces of brownie to add to the cookie dough!
I love the different types of texture you get with each bite of this cookie; chewy cookie, melty chocolate, and fudgy brownie.
Types of Brownie Bite Cookies
For this recipe, I used the mini brownies that I found in the bakery section of my grocery store. If you can't find them, you could always make your own using a brownie mix!
If you do make them yourself, I recommend to over-bake the brownies just a little bit, so they're not too soft when you're trying to cut them up.
Homemade brownies might swirl into the batter a little bit more than the store-bought brownies, but either way, they'll be delicious! Adding brownies to a cookie is going to be delicious either way!

Chocolate Chip Brownie Cookies
Equipment
- 2 oz Cookie Scoop
- Parchment Paper
- Baking Sheet
Ingredients
- 1 stick Butter
- ½ cup Sugar
- ½ cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1 ¾ cups Flour
- ½ teaspoon Baking Powder
- ½ cup Dark Chocolate chopped
- ½ cup Chopped Brownie Pieces
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together butter, sugar, and brown sugar. Mix until everything is smooth and creamy.1 stick Butter, ½ cup Sugar, ½ cup Brown Sugar packed
- Add in one egg and vanilla extract. Mix together.1 Egg, 1 teaspoon Vanilla Extract
- Then, add in flour and baking powder. On a low speed, mix all the dry ingredients to the dough.1 ¾ cups Flour, ½ teaspoon Baking Powder
- Chop chocolate and brownies to small pieces, then add to the dough and stir together with a spatula, making sure to scrape the bottom of the bowl to get everything mixed together.½ cup Dark Chocolate chopped, ½ cup Chopped Brownie Pieces
- Use a medium cookie scoop to scoop out the cookie dough and place on a parchment-lined baking sheet.
- Bake for about 12-14 minutes, the centers will still be slightly gooey.
- Let cool slightly, and enjoy*!
