It's your birthday everyday with these Birthday Cake Truffles! Soft vanilla cake rolled into bite-sized perfection, dipped in white chocolate, and of course, sprinkles on top! What kind of party would it be without sprinkles!?!?
What are Birthday Cake Truffles?
Birthday Cake Truffles are basically what all of your cake pop dreams are made of! I don't really like cake pops - they seem way too sweet to me. Most of the variations of cake pops that I've tried have some variation of frosting to cake ratio. But I think the end result ends up being way too sweet for me.
These cake truffles are made with cake, milk, and cream cheese. The milk and cream cheese acts as the perfect binder to get a really great consistency without needing the frosting. There's really no extra sugar added in besides what's already in the cake mix.
I like to dip mine cake truffles in white chocolate to get a nice little crunch, but they are plenty delicious all by themselves!
Chocolate Versus Candy Coating
When it comes to dipping chocolate, there's a few different options to work with. You can always use melted chocolate, but you might also see candy coating in your baking aisle. Sometimes, you'll see almond bark too! These are all great alternatives to dipping your cake truffles.
So which one works best?!
At the end of the day, it really comes down to preference. Candy coating is going to give you a nice little snap when you bite into it and comes in a range of colors, depending on what store you go to! It's also going to give you good coverage around your truffle, but that means it will end up being thicker than chocolate. Depending on the brand of candy coating, some can have a bland taste to them.
Chocolate is obviously going to add a sweetness and flavor to your cake truffle, but can also be a little thick. The good thing with chocolate is that you can thin it out using coconut oil.
I have worked with both, and both work equally as well! I personally like using melted chocolate, white chocolate for these truffles, since I always have some in my pantry.
Because I work with chocolate more, I feel more comfortable using it than candy melts. However, if you see some at your local store in a color you love, use those instead! They work basically the same!
Tips and Tricks
When you're mixing the cake, cream cheese, and milk together, the mixture will look really crumbly until it comes together. Don't panic, just keep mixing! I've found it helpful to use a spoon halfway through, or just use your hands! It'll come together after a few minutes of mixing!
When it comes to dipping your cake truffles into chocolate, I like to let mine firm up in the freezer beforehand. This helps it stay together while dipping in the chocolate. After you dip them in chocolate, let them firm up either at room temperature or in the fridge. I don't like to put chocolate in the freezer because then when you are serving them it can cause condensation to bubble on the chocolate!

Birthday Cake Truffles
Ingredients
- 1 box Vanilla Cake Mix made to package instructions
- 2 tablespoons Cream Cheese
- 3 tablespoons Milk
- 2 teaspoons Vanilla Extract
- ½ teaspoon Almond Extract
- ½ cup Sprinkles
- 2 cups White Chocolate Chips
Instructions
- To start, make the boxed vanilla cake according to package and let cool for an hour.
- After cake cools, crumble cake into a large bowl.
- In a measuring cup, pour in milk, then add in vanilla and almond extract.
- To the crumbled cake, add in cream cheese, sprinkles, and milk/extract mixture
- Use a hand mixer to mix everything together.
- Once mixture resembles cookie dough, use a small cookie scoop to scoop out the dough. Roll the dough into small balls.
- Place the truffles into the freezer to chill for 30 minutes.
- Melt the white chocolate in a microwave-safe bowl in 30-second increments until fully melted.
- Gently coat the cake truffle in the white chocolate, using a fork to gently tap the excess off.
- Set on a piece of parchment paper then add a few more sprinkles to the top.
- Let chocolate firm up completely before serving!
