If you’ve never made a galette before you are in for a delicious (and easy) treat! A galette is basically a free-form pie, so you don’t need to use any fancy pie pans for this dessert! I love how rustic and homemade this pie looks, while still being so easy to make! To make this dessert, you basically roll the galette dough into a rough circle, add the filling to the middle, then fold the edges over the fruit! It’s a rustic dessert that you can’t mess up! 

You can really use whatever fresh fruit you want to, which makes this galette the perfect recipe to make after a morning spent at the farmer’s market! You can swap out whatever fruit filling you like best! To serve this pie, I like to add a scoop of ice cream to the top, but you can do ice cream, whipped cream, or even a sprinkle of powdered sugar works as well!

Fresh or Frozen Fruit

Since this is a summer dessert recipe, I really like use fresh berries with this! My favorite summertime activity is going to walk around the farmer’s market with a warm latte in hand! There’s usually so many fresh berries that are juicy and sweet! Because this is a very simple recipe, I love changing out the berries and experimenting with different flavors! For example, you could do a mixed berry galette and add blackberries, raspberries, and blueberries! You could do raspberries and strawberries as well! Or even add in some stone fruit, like peaches and blueberries in one galette! 

You can basically add whatever fruit you like best to this recipe! Just be mindful that as summer goes on, the fruit might get sweeter, so you can adjust the sugar content of this recipe!

However, if you’re making this slightly before or after the summer season, no worries! You can still enjoy a delicious berry galette by using frozen fruit! If you want to use frozen fruit with this recipe, I recommend taking the fruit straight from the freezer, mixing everything together, and then baking! Try not to let the fruit thaw out too much, as that can release extra moisture into your galette!

Herbs in Dessert

I recently started an herb garden on my window sill and have been looking on ways to incorporate my fresh herbs into other dishes besides dinner! I love adding a bit of savory to my sweet treats to help infuse them with more depth of flavor! 

For this recipe, I like to use fresh rosemary! If you are going to use dried rosemary just use about a teaspoon in this recipe! You can also substitute the rosemary for thyme or mint! 

If you wanted to serve this recipe for an appetizer, I love the idea of adding a drizzle of honey or maple syrup and adding either goat cheese or feta to the top of this recipe! It adds a punch of saltiness that pairs perfectly with the sweet berries! You should definitely give that one a try! If you were going to make this a savory galette, you could also try using puff pastry instead of pie dough! The flakey puff pastry would pair perfectly with the sweet berries!   • Granulated Sugar – you can also use cane sugar or brown sugar as well!
  • Lemon Zest – I like the pop of flavor the lemon zest adds, if you want more lemon flavor you can leave out the vanilla 
  • Rosemary

Step by Step Instructions:

Step 1. In a medium bowl, add sugar, lemon zest, and rosemary. Mix everything together.

Step 2. Then add in berries, vanilla extract, and cornstarch. Stir together. 

Step 3: Roll out pie crust on a lightly floured surface, then add the blueberry filling in the center of the dough, leaving a 2-inch border

Step 4. Gently fold the edges of the pie crust over the fruit. Brush an egg wash over the edges and bake until the pie crust is a golden color. 

Storage Instructions:

To store this Blueberry Galette, I like to keep it at room temperature covered in plastic wrap for about 2-3 days! You can also store it in the refrigerator for about 4-6 days! If you only have a few slices left, I like to pop them in an airtight container and store them that way! You can also separate them using a piece of parchment paper! 

If you are going to freeze this galette, securely wrap the pie in plastic wrap before placing in a freezer bag for about 3 months! Then when you are ready to enjoy your galette, you can thaw it in the refrigerator overnight before heating up in the oven or microwave!

Helpful Tips and Tricks

I like to use a store-bought pie dough to make this recipe even easier, which means you can leave your food processor for another recipe! However, if you have a family-favorite homemade pie dough, you can use that as well! 

To get that perfect golden brown crust, I make an egg wash using one beaten egg and a splash of water that I brush along the edges of the dough! If you don’t want to waste a whole egg on this, you can also use heavy cream as well! 

Be sure to really press the edges of the pie crust together to prevent any excess liquid from leaking out the side! It’s okay if some does, it just helps the pie look a bit more rustic! 

 I like the pop of flavor the lemon zest adds, if you want more lemon flavor you can leave out the vanilla extract and add a healthy squirt of lemon juice instead! That helps brighten up the whole blueberry mixture! 

This easy galette is the perfect summer dessert because you don’t have to use any fancy equipment to make it! The flaky crust and sweet berries pair perfectly with the zing of the lemon zest and the woodsy notes of the rosemary! Ingredients

  • 1 Store-Bought Pie Dough
  • 1 cup Blueberries fresh or frozen
  • 1 cup Blackberries fresh or frozen
  • 2 tablespoons Sugar
  • 1 tablespoon Lemon Zest
  • 1 tablespoon Fresh Rosemary chopped
  • 1/2 tablespoon Cornstarch
  • 1 teaspoon Vanilla
  • 1 Egg

Instructions

  • Preheat oven to 375 degrees.
  • In a small bowl, mix together sugar, rosemary, and lemon zest.
  • In a bowl, combine blueberries, blackberries, cornstarch, and vanilla. Then pour in sugar mixture.
  • Mix together and set aside.
  • Roll out the pie dough to roughly 11-inches wide.
  • Add the berry mixture to the pie dough leaving a 2-inch wide border.
  • Gently, fold the edges of the pie dough up and over the berries. Pressing gently to seal.
  • Make an egg wash combining one egg with a splash of water. Brush the egg wash around the edges of the pie dough, then sprinkle with sugar.
  • Place in the oven to bake for about 45 minutes to 1 hour.
  • Let cool slightly and serve!
