Pies can be tricky but turning them into a delicious and easy rustic galette is my new favorite thing! It’s so easy to make a galette but they look so beautiful! Cut down on all the hassle of getting out a pie pan, wire racks, and food processors, and make this simple and easy Raspberry Galette! Trust me when I say you won’t believe how easy it is to make this recipe! I love using store-bought pie crust to make this recipe even better! But if you have a family favorite pie dough recipe, you can always use that instead! 

What is a Galette

A galette is a French term for a free-from pastry! Because of that, it’s really easy to make a galette into whatever shape you like! You can make mini galettes or a large galette! Just like with a pie, you can make them savory or sweet! I’ve seen a lot of tomato galettes in summer that I think I’m going to have to try this year! The only different between pies and galettes is the galette filling needs to be more solid – you can’t really turn a pumpkin pie into a galette, unfortunately! 

To make a galette, roll out your pie dough into a wide circle, about 12 inches or so! Then add your filling into the center of the dough, leaving about a 2-inch border around the edges! Make an egg wash of an egg and a splash of water, then brush it around the edges! Gently fold the edges of the dough onto the filling! This locks in the filing so be sure to gently press it together! I even like to brush the egg wash in between the folds to really help it stick! It’s so simple, but so delicious!

Fresh or Frozen Berries

For this recipe, I went with fresh raspberries since spring is coming up and I’ve been absolutely waiting to get back to the farmers market! However, I’ve made fruit galettes using fresh and frozen fruit! I recently made a blueberry galette using frozen blueberries that worked out perfectly! It was a spin on a classic blueberry pie but so much easier! 

I recommend using whatever works easiest for you! If it’s in the middle of winter and you’re craving something fruity, I would use frozen fruit! If ripe summer berries are an option, then I highly recommend using those! Just note that you might have to adjust the sugar amount if your berries are really sweet! 

Equipment Needed:

Glass Bowl – Perfect for mixing all the berries together! 

Pastry Brush – This is what I use to brush the egg wash along the edges of the pie crust! If you don’t have one, you can just use your finger! Clean hands are a cook’s best friend!

Parchment Paper – This is really a must for this recipe! Sometimes the fruit juice can leak out of the pastry so it’s great to have something there to catch it and make clean up a breeze! 

Large Baking Sheet – I like to use a large baking sheet to give the galette plenty of room to bake up in the oven!

Ingredient List:

  • Premade Pie dough
  • Raspberries – Fresh or Frozen
  • Sugar
  • Cornstarch
  • Vanilla Extract
  • Egg
  • Butter
  • All Purpose Flour
  • Brown Sugar
  • Powdered Sugar
  • Heavy Cream
  • turbinado Sugar – this is optional, but I love the crunch it adds to the flaky pie crust!

Step by Step Instructions:

Step 1. In a medium bowl, combine raspberries, sugar, cornstarch and vanilla extract. Mix everything together. 

Step 2. Add raspberry filling to the middle of the dough. Then fold over the edges. Brush egg wash onto the edge of the dough. 

Step 3: In a small bowl, make the crumble; combine flour, butter, sugar, brown sugar, and vanilla extract. Then add crumble to the top of the fruit filling.

Step 4. Bake in the oven for about 45 minutes, until the edges are golden brown!

Helpful Tips and Tricks

To store this delicious galette, place in an airtight container and store at room temperature for about 2 days! 

Be sure to roll out the pie dough on a lightly floured surface so it doesn’t stick! I even like to add a bit of flour to my rolling pin to really make sure it doesn’t stick!

I’m using store-bought pie crust to make this recipe even easier, but you can use a homemade pie crust if you want to!That would make this raspberry pie even more delicious! 

There is such a large variety of berries during summertime so feel free to use whatever berry is your favorite! From blackberries, to blueberries, to strawberries and more! The best part of this easy raspberry galette is that you can turn into whatever kind of galette you want! Now that I”m thinking about it, a blackberry galette sounds mighty delicious! 

If you want,  you can leave of the vanilla glaze at the end and just add a scoop of ice cream! I love adding the cold vanilla ice cream to a warm galette and letting it melt into the warm fruit! So good!

Ingredients

  • 1 Store-Bought Pie Dough
  • 2 cups Raspberries fresh or frozen
  • 2 tablespoons Sugar
  • 1/2 tablespoon Cornstarch
  • 1 teaspoon Vanilla
  • 1 Egg
  • Turbinado Sugar garnish

Crumble:

  • 3 tablespoons Butter softened
  • ½ cup Flour
  • 2 tablespoons Brown Sugar
  • 2 tablespoons Sugar
  • ½ teaspoon Vanilla

Glaze:

  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla
  • 3 tablespoons Heavy Cream

Instructions

  • Preheat oven to 375 degrees.
  • In a bowl, combine raspberries, cornstarch, sugar, and vanilla.
    2 cups Raspberries fresh or frozen, 2 tablespoons Sugar, 1/2 tablespoon Cornstarch, 1 teaspoon Vanilla
  • Mix together and set aside.
  • Roll out the pie dough to roughly 12-inches wide.
    1 Store-Bought Pie Dough
  • Add the raspberry mixture to the pie dough leaving a 2-inch wide border.
  • Gently, fold the edges of the pie dough up and over the fruit. Pressing gently to seal.
  • Make an egg wash combining one egg with a splash of water. Brush the egg wash around the edges of the pie dough and sprinkle with turbinado sugar.

  • Then make the crumble:

Crumble Topping:

  • In a bowl, combine butter, sugar, brown sugar, vanilla, and flour. Stir together.
    3 tablespoons Butter softened, ½ cup Flour, 2 tablespoons Brown Sugar, 2 tablespoons Sugar, ½ teaspoon Vanilla
  • Add the crumble to the top of the pie.
  • Place the pie on a baking sheet and then put it into the oven, bake the pie for about 45 minutes!
  • While the galette cools, make the glaze by combining powdered sugar, vanilla, and heavy cream.
    1 cup Powdered Sugar, 1 teaspoon Vanilla, 3 tablespoons Heavy Cream
  • Drizzle over the pie and enjoy!
