If an almond croissant and a blueberry pie had a baby, it would be this delicious Blueberry Almond Galette. A smooth, creamy almond paste topped with sweet blueberries makes this galette the perfect balance of sweetness, texture, and delicious flavor!
What's with the Almond Paste?
Almond paste, almond custard, almond filling, really I'm not quite sure what to call it, besides delicious!
This almond filling is my take on something similar to an almond croissant. I had my first almond croissant in Paris and it was truly magical. A little bit sweeter than a plain croissant but not as sweet as a chocolate croissant. It pairs perfectly with a cup of tea in the morning!
I wanted to make a filling that had just the right amount of almond flour without being too overwhelming.
This filling uses almond flour and almond extract to get the perfect almond flavor. I like to use the almond flour because it has the perfect nutty texture, while the almond extract helps boost the almond flavor!
Pie Crust
You can't have a Blueberry Almond Galette without the pie crust!
If you're like me and struggle with pie crust, you can totally use a store-bought pie dough! In fact, I think it makes this recipe even easier (and quicker!) to just a store-bought alternative.
However, if you have a favorite family recipe for pie crust, you can use that as well! I like to add a few drops of almond extract to the pie dough, but that's totally optional!
Tips and Tricks
I like to roll my pie crust to about 11 inches in diameter so when you fold it up, it ends up being around 9 inches! The perfect sized pie to serve your family!
Adding a little bit of sugar to the edge of the pie crust will help add to the crunchy texture of the pie and gives it a little sparkle after it bakes!

This Blueberry Almond Galette stole my heart with just one bite! The layer of almond paste with the sweet blueberries pairs perfectly with the flakey pie crust!
I think the only thing this slice needs is a scoop of vanilla ice cream!

Blueberry Almond Galette
Ingredients
- 1 Store-Bought Pie Dough
- 1 pint Blueberries
- 2 tablespoons Sugar
- ½ tablespoon Cornstarch
- 1 teaspoon Vanilla
- 1 Egg
- ½ cup Almonds sliced
Almond Paste:
- 1 cup Almond Flour
- 1 teaspoon Almond Extract
- ½ teaspoon Vanilla Extract
- 1 Egg
- ½ cup Sugar
- 6 tablespoons Butter room temperature
Instructions
- Preheat oven to 375 degrees.
- In a bowl, combine blueberries, sugar, cornstarch, and vanilla.
- Mix together and set aside.
- To make the almond paste custard, add almond flour, almond extract, vanilla extract, butter, egg, and sugar to a bowl.
- Stir everything together until it forms a paste. Set aside.
- Roll out the pie dough to roughly 11-inches wide.
- Add the almond paste to the pie dough leaving a 2-inch wide border.
- Add the blueberries to the top of the almond paste.
- Gently, fold the edges of the pie dough up and over the blueberries. Pressing gently to seal.
- Make an egg wash combining one egg with a splash of water. Brush the egg wash around the edges of the pie dough.
- Sprinkle a few almond on top, pressing gently so they stick to the egg wash.
- Place in the oven to bake for about 45 minutes to 1 hour.
- Let cool slightly and serve!
