This Chai Coffee Cake has all the warm and spicy flavors of chai mixed into a light, soft cake with a brown sugar crumble! Have your chai and eat it too with this easy and delicious coffee cake!
What is a Chai Coffee Cake?
Coffee Cake is one of my favorite coffee store treats! It's essentially made with similar ingredients as a normal cake, except loaded up with a crumble topping on top of the coffee cake as well as sprinkle in the middle! Coffee cakes will typically have either a sour cream, Greek yogurt, or buttermilk element added in, which adds an acidic note that helps balance out the sweetness!
This Chai Coffee Cake is infused with all the flavors of a classic chai! I make this amazing chai spice mixture that you can add to oatmeal, cupcakes, cookies, etc. Not only is this chai spice in the coffee cake, but it's also added to the crumble, as well! The coffee cake is also made with chai infused milk so you really get that delicious, spicy chai flavor!
I am chai obsessed, so this cake is right up my alley!
Crumble and More Crumble
It goes against my core beliefs to *not* add crumble to a dessert. There's nothing that more butter and sugar can not make better!
To make this dessert (or is it breakfast?) even better, the crumble topping goes on top of the cake, as well as sprinkled in the middle. When you cut a slice of the cake, you get this beautiful swirl throughout!
Vanilla Glaze
One of my favorite versions of chai is a vanilla chai! In fact, I drink it every morning! There's even a warm cup of vanilla chai sitting right beside me.
I really wanted to include that vanilla flavor into this coffee cake, so I added this vanilla glaze! Glazes are super easy to make; they just need powdered sugar, vanilla, and heavy cream. I love the strong vanilla flavor that pairs perfectly with the chai notes in the cake!
The glaze is optional, so you can leave it off if you'd like! If you prefer to get a stronger chai flavor, you can also add the chai spice to the glaze!

This recipe is definitely one of my longer ingredient lists, but it's totally worth it! You can make a large batch of the chai spice and sprinkle it where you would add cinnamon! It's great in oatmeals, coffee, cookies, muffins! You name it!
This Chai Coffee Cake is soft and moist, loaded up with all the flavors of chai! I could eat this for breakfast, dessert, a snack, you name it!

Chai Coffee Cake
Ingredients
- ½ cup Oil
- ½ cup Sugar
- ½ cup Brown Sugar
- 2 Eggs
- ½ cup Sour Cream
- 1 teaspoon Vanilla
- 2 cups Flour
- ¼ teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 2 teaspoons Chai Spice
- ¼ cup Milk
- 2 Chai Tea Bags
Crumble Topping:
- 1 ½ cup Flour
- ¾ cup Brown Sugar
- ½ cup Sugar
- 1 teaspoon Chai Spice
- 1 stick Butter melted
Chai Glaze:
- 1 cup Powdered Sugar
- 1 teaspoon Vanilla
- 2 tablespoons Heavy Cream
Chai Spice:
- 3 tablespoons Cinnamon
- 1 ½ tablespoons Ground Ginger
- 1 tablespoon Cardamom
- 1 teaspoon Ground Cloves
- 1 teaspoon Nutmeg
- ¼ teaspoon Black Pepper
Instructions
- Preheat oven to 350 degrees.
- Add milk to saucepan on the stovetop over medium-low heat, add in tea bags. Allow to steep for 10 minutes while you prepare the rest of the batter!¼ cup Milk, 2 Chai Tea Bags
- Add oil, sugar, and brown sugar to a bowl. Mix together.½ cup Oil, ½ cup Sugar, ½ cup Brown Sugar
- Crack in two eggs, sour cream, and vanilla. Whisk together.2 Eggs, ½ cup Sour Cream, 1 teaspoon Vanilla
- Remove tea bags from milk, squeezing gently to get excess milk and flavor out! Pour milk into wet ingredients. Stir together.
- To the wet ingredients, add in flour, baking soda, baking powder, and chai spice. Stir together and set aside.2 cups Flour, ¼ teaspoon Baking Soda, 1 teaspoon Baking Powder, 2 teaspoons Chai Spice
- In a separate bowl, add flour, brown sugar, sugar, chai spice, and melted butter. Stir together.1 ½ cup Flour, ¾ cup Brown Sugar, ½ cup Sugar, 1 teaspoon Chai Spice, 1 stick Butter
- Pour in half the batter to a parchment lined baking dish. Sprinkle in half the crumble mixture. Then add the remaining batter to the top, followed with the rest of the crumble mixture.
- Bake in a preheated oven for 45-50 minutes, or until a toothpick inserted comes out clean!
- While the cake cools, make the glaze by combining powdered sugar, vanilla, and heavy cream.1 cup Powdered Sugar, 1 teaspoon Vanilla, 2 tablespoons Heavy Cream
- Drizzle glaze over cake and enjoy!
To Make Chai Spice:
- Add cinnamon, ginger, cardamom, cloves, nutmeg, and black pepper to a bowl. Stir to combine.3 tablespoons Cinnamon, 1 ½ tablespoons Ground Ginger, 1 tablespoon Cardamom, 1 teaspoon Ground Cloves, 1 teaspoon Nutmeg, ¼ teaspoon Black Pepper
