What is Cornmeal?
Yellow Cornmeal is a type of flour that is made out of grinding up dried corn! It reminds me of a courser texture than almond flour! I love the texture that it can add to baked goods as well as the subtle sweetness of the corn flavor that it adds!
When you’re looking for this at the grocery store, make sure you grab cornmeal and not corn flour or polenta. While they might all sound the same, they can add a different texture and flavor to these cookies! We want to use cornmeal in these cornbread cookies!

Substitutions and Additions
These cookies are so delicious to make, but I have a few extra options to make these cookies work best for you!
Honey – I’ve recently come around to loving honey, however, if you’re not there yet (no judgment), you can also use agave or maple syrup! If you really want to spice things up, you could use hot honey as well!
Strawberry Jam – I love the flavor of sweet strawberry jam, but you can also use blackberry, blueberry or your favorite fruit jam!
Honey Butter Frosting – If you wanted to go all out, you could make these into honey buttercream cornbread cookies and add a smear of buttercream with a drizzle of honey! You could even buy some store-bought buttercream and add honey to that to make it even easier!

Equipment Needed:
Electric Mixer – I like use a hand mixer to help everything mix together easier! You can also use a stand mixer using the paddle attachment if you would like!
Baking Sheet – I like use a large baking sheet to give these cookies plenty of room to spread out in the oven! I like to have to a few different cookie sheets to bake the cookies in batches in I need to!
Parchment Paper – This is an essential tool in my kitchen to help prevent any cookies from sticking and make clean up a breeze!
Cookie Scoop – I use a medium cookie scoop for these cookies because I like to create a large, thick cookie. You can use whatever scoop you like, even an ice cream scoop, but please note that the size of your cookies could affect the baking time!

Step by Step Instructions:

Step 1. In a large bowl, mix together butter, honey, and brown sugar.

Step 2. Then add in egg and vanilla extract.

Step 3: Add the dry ingredients to the wet ingredients. Then mix everything together.

Step 4. Scoop our cookie dough onto cookie sheet, then add a dollop of jam. Swirl around and bake in the oven!
Storage Instructions:
Store these cookies in an airtight container in the fridge for about 3-4 days!
If you want to freeze these cookies, scoop out the cornbread cookie dough and place on a piece of parchment paper and freeze. Then once the cookies are frozen, store in an airtight freezer bag for 3 months! When you’re ready to enjoy them, let thaw in the fridge overnight or a room temperature for 30 minutes. Add the jam and bake according to recipe directions!

Helpful Tips and Tricks
I like to flatten out the cookie dough just slightly before adding in the strawberry jam!
You can also add a pinch of flaky salt to the top of the cookies that helps balance out the sweetness! You know me, I love to finish every dessert with a little pinch of salt!
These are such a delicious cookie to make for summertime! I love the combination of the chewy cookies with the sweet jam and the buttery flavor combined with the honey! It’s such an easy cookie that makes your whole house smell amazing!

Cornbread Cookies with Strawberry Jam and Honey

Ingredients
- 1 stick Butter room temperature
- 1/2 cup Brown Sugar
- 2 tablespoons Honey more for garnish
- 1 Egg
- 1 teaspoon Vanilla Extract
- 1 1/4 cups Flour
- 1/2 cup Cornmeal
- 1 teaspoon Baking Powder
- 1/2 cup Strawberry Jam
Instructions
- Preheat oven to 350 degrees.
- In a bowl, mix butter, brown sugar, and honey together.1 stick Butter, 1/2 cup Brown Sugar, 2 tablespoons Honey
- Then add in egg and vanilla extract. Mix together.1 Egg, 1 teaspoon Vanilla Extract
- Add in flour, cornmeal, and baking powder.1 1/4 cups Flour, 1/2 cup Cornmeal, 1 teaspoon Baking Powder
- Scoop out cookie dough onto a piece of parchment paper. Then add a spoonful of jam to the top and gently swirl it through the top of the cookie dough.1/2 cup Strawberry Jam
- Bake in the oven for about 15 minutes.
- Let cool slightly, then drizzle with honey. Enjoy!
