These Pumpkin French Toast Sticks are so delicious for chilly fall mornings! I have a few substitutions and additions you can add to make this recipe really special! 

Types of Bread: You can really use whatever your favorite bread is for this recipe; from French bread, to brioche, to challah, you can use whatever type of sturdy bread you prefer! I like to use day-old bread or slightly stale bread for this recipe so you don’t get droopy French toast if the bread is too soft! If you just bought a fresh bread but still have a craving for French toast, just cut the bread into slices and let them set out overnight! 

Toppings: To top these French toast sticks,  you can add nuts, cinnamon sugar sprinkle, powdered sugar, or top with whipped cream! 

Types of Milk: You can use any kind of milk you have on hand, from whole milk, to almond milk! I like to use oat milk, since I like the creamy texture it has! If you wanted to make these extra rich and decadent, you could use heavy cream!

Equipment Needed:

Large Bowl – I like to use a large bowl to mix everything together then pour the mixture into a shallow small bowl! This helps when you’re dipping the pieces of bread into the pumpkin mixture!

Saucepan – I use a large nonstick saucepan to make my regular French toast recipe and for these French toast sticks! You can also you a hot skillet or a griddle if you have that! 

Baking Sheet – I like to use a baking sheet lined with parchment paper to help these freeze in a single layer!

Ingredient List:

  • Brioche Bread
  • Eggs
  • brown sugar
  • Milk
  • Pumpkin Puree
  • Vanilla Extract
  • Pumpkin Pie Spice
  • Cinnamon
  • Cinnamon Sugar

Step by Step Instructions:

Step 1. Cut the bread into about 1 and 1/2 inch slices! You want these to be on the thick side! If you have a fresh loaf of bread, you might want to let them dry out overnight! 

Step 2. Then in a shallow bowl, mix together eggs, milk, pumpkin puree, vanilla extract, pumpkin pie spice, cinnamon, and brown sugar. 

Step 3: Dip each side of the bread slices into the egg mixture. 

Step 4. Add the dipped bread to a nonstick saucepan and cook on each side of the bread! When the bread is done, dip into the cinnamon sugar mixture and let cool! 

Storage Instructions:

I like to store these French toast sticks in an airtight container in the fridge if you’re going to be eating them right away! 

If you want to save these, you can pop them in the freezer to freeze in a single layer. Then add into a freezer safe bag and store in the freezer for about 3-4 months! When you’re ready to eat them, you can grab a few from the bag and reheat in the oven or microwave! It’s a great breakfast idea to keep in the freezer for busy weekday mornings!

Helpful Tips and Tricks

Be sure to check the label when you’re grabbing a can of pumpkin puree at the grocery store! You want to grab 100% pumpkin puree and not pumpkin pie filling! Pumpkin Pie mix already has all the sugar and flavorings added in, so it can affect the sweetness of your recipe!

Ingredients

  • 1 Loaf Brioche Bread
  • 2 Eggs
  • 1/2 cup Milk
  • 2 tablespoons Pumpkin Puree
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Pumpkin Pie Spice
  • 1/2 teaspoon Cinnamon
  • 2 tablespoons Brown Sugar
  • 1/2 cup Cinnamon Sugar for garnish

Instructions

  • Cut brioche bread into thick slices about 1 1/2 inches wide!
    1 Loaf Brioche Bread
  • Make pumpkin custard mixture by combining eggs, milk, pumpkin puree, vanilla extract, pumpkin pie spice, cinnamon, and brown sugar.
    2 Eggs, 1/2 cup Milk, 2 tablespoons Pumpkin Puree, 1 teaspoon Vanilla Extract, 1 teaspoon Pumpkin Pie Spice, 1/2 teaspoon Cinnamon, 2 tablespoons Brown Sugar
  • Whisk everything together.
  • Heat a nonstick skillet over medium low heat.
  • Take one piece of bread and dip each side in the mixture, then place on the skillet.
  • Be sure to let each piece cook on each side for about a minute or so! You want each side to be golden brown!
  • Then when the French toast sticks are done, immediately coat in cinnamon sugar mixture!
    1/2 cup Cinnamon Sugar
  • Serve with powdered sugar and maple syrup!

Notes

If you’re worried about the French toast pieces sticking, you can always add some butter or nonstick spray to the pan!
