This Homemade Pumpkin Spice Granola is quick and easy to throw together! It's the perfect balance of chewy clusters and crispy edges that goes perfectly with the chewy dried fruit and snappy pumpkin seeds!
Best Oats to Use
For this recipe, I love to use old fashioned oats instead of quick cooking out! Because old fashioned oats tend to be a bit bigger, they hold up a little better against the cooking time and the other ingredients in the granola.
If you only have quick cooking oats, try to adjust the cooking time so they don't burn! I recommend checking after about 15 minutes!
Different Types of Seeds/Fruit
For this fall flavored granola, I like to add pumpkin seeds, dried apricots, and dried cranberries! You can add different seeds and nuts as you like! I've seen some granola with sunflower seeds, chia seeds, and flax seeds! Feel free to mix in whichever combination is your favorite!

Step-By-Step Instructions
- Step 1: Combine butter, brown sugar, maple syrup, vanilla extract, cinnamon and pumpkin spice into a sauce pan.
- Step 2: Add oats, pumpkin seeds, and dried fruit to a large bowl.
- Step 3: Pour over melted butter mixture. Stir to combine.
- Step 4: Lay flat on a baking sheet and bake for 20 minutes.
Hint: The granola will still be slightly soft and sticky when you pull it from the oven! It will firm up as it cools!
Variations and Substitutions
This Pumpkin Spice Granola is going to be my new breakfast staple this fall, but here are some other options if you'd like!
- Seeds and nuts - really load up the nutritional value of this granola with pecans, chia seeds, and flax seeds!
- Cranberry Orange - add some orange zest to the top of the granola after baking to get a bright citrus note!
- Honey - replace the syrup with honey for a sweeter more floral flavor throughout!
Equipment
Baking Sheet - Baking sheets are the best for laying out the granola to bake in the oven! I like to use the largest one I have to lay out the granola in a flat spread.
Saucepan - I like to melt my butter and sugar together using a saucepan because it helps the brown sugar really dissolve into the butter and syrup!
Top tip
After the granola comes out of the oven, it's still going to be soft! It will firm up as it cools, so don't over-bake it!
Storage
- Room Temperature - store in an airtight container for up to four weeks!
- Freezer - if stored properly in an airtight container, granola can last up to 3-4 months in the freezer!

Yes! Honey or agave are great substitutes for maple syrup!
Definitely! I have a *a bit* of a sweet tooth, so I like my granola a tad sweet, so you can add a little less brown sugar if you'd like!

Ingredients
- 2 tablespoons Butter
- ¼ cup Brown Sugar
- 2 tablespoons Maple Syrup
- 1 teaspoon Vanilla Extract
- ½ teaspoon Cinnamon
- 1 teaspoon Pumpkin Pie Spice
- 2 cups Rolled oats
- ⅓ cup Pepitas
- ½ cup Dried Cranberries
- ½ cup Dried Apricots chopped
Instructions
- Preheat oven to 350 degrees.
- In a small saucepan, melt the butter with brown sugar, vanilla extract, and maple syrup.2 tablespoons Butter, ¼ cup Brown Sugar, 2 tablespoons Maple Syrup, 1 teaspoon Vanilla Extract
- Stir everything together, then add in cinnamon and pumpkin pie spice.½ teaspoon Cinnamon, 1 teaspoon Pumpkin Pie Spice
- In a large bowl, mix together rolled oats, cranberries, chopped dried apricots, and pepitas.2 cups Rolled oats, ⅓ cup Pepitas, ½ cup Dried Cranberries, ½ cup Dried Apricots
- Pour over butter mixture and mix together.
- Then pour on a baking sheet and bake for about 10 minutes, then toss gently and put back in the oven for another 10 minutes.
