Fresh or Frozen Strawberries

For this recipe, I really like to use fresh strawberries because I think they have the best flavor! I love the color and sweetness that fresh strawberries add to this galette. A lot of frozen strawberries are frozen whole, which doesn’t really work the best for this galette recipe!

If you do use frozen strawberries, make sure you buy the sliced frozen strawberries as though bake up better than the whole strawberries! There might be a little extra juice from the frozen strawberries, but no worries! It will still taste delicious!

Additions or Substitutions

Fruit Options: Summertime is full of a variety of fruits that all work delicious in this galette, from blueberries, to peaches, to strawberries! You can really add whatever fruit you like in this galette, or you can add a combination of fruits such as blueberries and peaches! 

Almond Flavor: If you wanted to increase the almond flavor in this recipe, you can add a few drops of almond extract to the strawberries! Just be careful though, as almond extract can be very overpowering!

Lemon Flavor: If you wanted to play up the lemon flavor, you can also substitute the vanilla extract for a squeeze of lemon juice! 

Fresh Herbs: Feel free to get really creative and add a few different herbs to your sweet treats this summer! For example, strawberry and basil are a delicious combination that adds a bit of depth to your desserts! I added rosemary to a galette and it’s the perfect sweet and savory combination!

Ingredient List:

  • Fresh Strawberries 
  • Store-bought Pie Dough 
  • Sugar, plus some to sprinkle on top
  • Lemon Zest
  • Vanilla Extract
  • Cornstarch
  • Egg
  • Sliced Almonds

Step by Step Instructions:

Step 1. Add lemon zest to a bowl with the sugar. Massage together. 

Step 2. Then add in the strawberries, vanilla extract, and cornstarch. 

Step 3: Pour strawberry mixture into the pie dough, leaving a two-inch border.

Step 4. Add an egg wash to the edges of the dough, and add sliced almonds and an extra sprinkle of sugar. 

Storage Instructions:

I like to wrap any remaining galette into plastic wrap or in an airtight container! You can store at room temperature for about 3 days!

Helpful Tips and Tricks

For this recipe, I like to use an egg and a splash of water for the egg wash on the edges of the pie dough! This helps the crust get a beautiful golden brown color as well as helping the almonds and sugar stick to the crust! If you don’t want to use a whole egg for this, you can use an egg yolk or heavy cream! 

When rolling out the pie dough you can either roll it out on a lightly floured work surface or roll out a piece of parchment paper that will then go on the baking sheet!

This Easy Rustic Strawberry Almond Galette with lemon is the perfect dessert for any summer occasion!

Equipment

  • Parchment Paper
  • Baking Sheet
  • Large Bowl

Ingredients

  • 1 Store-Bought Pie Dough
  • 2 cups Strawberries
  • 2 tablespoons Sugar
  • 1 tablespoon Lemon Zest
  • 1/2 tablespoon Cornstarch
  • 1 teaspoon Vanilla
  • 1 Egg
  • 1/2 cup Almonds sliced

Instructions

  • Preheat oven to 375 degrees.
  • In a small bowl, mix together sugar and lemon zest.
    2 tablespoons Sugar, 1 tablespoon Lemon Zest
  • In a bowl, combine strawberries, cornstarch, and vanilla. Then pour in sugar mixture.
    2 cups Strawberries, 1/2 tablespoon Cornstarch, 1 teaspoon Vanilla
  • Mix together and set aside.
  • Roll out the pie dough to roughly 11-inches wide.
    1 Store-Bought Pie Dough
  • Add the strawberry mixture to the pie dough leaving a 2-inch wide border.
  • Gently, fold the edges of the pie dough up and over the strawberries. Pressing gently to seal.
  • Make an egg wash combining one egg with a splash of water. Brush the egg wash around the edges of the pie dough.
    1 Egg
  • Sprinkle a few almond on top, pressing gently so they stick to the egg wash.
    1/2 cup Almonds sliced
  • Place in the oven to bake for about 45 minutes to 1 hour.
  • Let cool slightly and serve!
