If you love matcha, you’ll love the combination of matcha and white chocolate with the gooey marshmallow treats! These Matcha Rice Krispie Treats are an easy recipe to make and enjoy all week long! It’s a spin on the classic childhood treat while still having a touch of indulgence with the matcha powder! Not to mention the natural green color of these cereal treats is so pretty! These would be perfect for a Halloween party or even to bring to a Christmas Cookie exchange!

What is Matcha?

Matcha is powdered green tea, which is where it gets that signature green color! It has a very earthy taste to it, which makes it perfect for pairing for something sweet like white chocolate chips! 

When you’re looking through your local grocery stores, make sure you’re only buying matcha powder! There’s a few brands that sell matcha latte powders and that’s not what we’re looking for for this recipe! You’ll want to use either culinary grade matcha powder in this recipe as the other grades of matcha (ceremonial grade and premium grade) are better for enjoying in tea form! The culinary-grade matcha can have a stronger taste which lends better to baking recipes! 

It took me awhile to get into matcha powder but I really enjoy the earthiness of the tea and now I have a matcha at least once a day!

Additions and Substitutions

I love the combination of the earthy matcha powder with the sweetness of the white chocolate chips! But I have a few tips and tricks to customize this recipe for your tastebuds! 

White Chocolate Chips – If you’re not the biggest fan of white chocolate (no worries, this is a judgement-free zone!), you can use dark chocolate chips! I don’t recommend using semi-sweet or milk chocolate chips in this recipe! 

Add Extra Crunch – You can add in chopped pistachios if you wanted to add some extra crunch to these treats while also adding a pop of salty flavor!

Equipment Needed:

Square Pan – the size of the pan depends on how thick the rice krispie treats will be! If you use an 8×8 square pan you’ll have thicker treats compared to using a 9×13 rectangular pan! 

Saucepan – I like to use a nonstick saucepan to melt my marshmallow mixture! 

Parchment Paper – this is helpful to make sure the treats don’t stick the pan when you’re ready to take them out and cut them!

Nonstick Spray – I always keep a can of nonstick spray around whenever I’m making rice krispie treats! It’s helpful to spray on your mixing spoon, your hands, or whatever else the marshmallow is sticking to!

Ingredient List:

  • Butter – I prefer to use salted butter, but if you use unsalted butter, add a pinch of salt to the marshmallow mixture. 
  • Mini Marshmallows
  • Rice Cereal
  • White Chocolate Chips
  • Vanilla Extract
  • Matcha Powder

Step by Step Instructions:

Step 1. In a large bowl, add rice cereal, a cup of mini marshmallows, and white chocolate chips. 

Step 2. In a large pot, melt marshmallows and butter. 

Step 3: Then add in matcha powder and vanilla extract to the melted marshmallows.

Step 4. Pour matcha marshmallow mixture over rice cereal mixture and mix together. Pour into your prepared pan. 

Storage Instructions:

I like to store my matcha rice crispy treats in an airtight container at room temperature for about 4-5 days! 

I don’t recommend freezing this recipe because I think the texture of the rice krispies gets affected when you freeze them!

Helpful Tips and Tricks

 I prefer to use mini marshmallows in my rice krispie treats because I like to mix in about a cup and half of mini marshmallows you get little pops of marshmallow throughout! If you prefer to use large marshmallows, just use about 3/4’s of the bag! 

If you’re short on time, you can leave off the white chocolate drizzle and just add a few extra white chocolate chips to the top!

Equipment

  • Square Pan
  • Parchment Paper
  • Large Saucepan

Ingredients

  • 4 tablespoons Butter
  • 1 bag Mini Marshmallows
  • 1 teaspoon Vanilla Extract
  • 5 cups Rice Cereal
  • 1 tablespoon Matcha Powder
  • 3/4 cup White Chocolate Chips separated

Instructions

  • Melt butter in a large pot on the stove
    4 tablespoons Butter
  • Add in most mini marshmallows, reserving about a cup and a half. Stir occasionally so they don’t burn! Then add in vanilla.
    1 bag Mini Marshmallows, 1 teaspoon Vanilla Extract
  • In a large bowl, and rice cereal, remaining marshmallows, and 1/2 cup white chocolate chips.
    5 cups Rice Cereal, 3/4 cup White Chocolate Chips
  • After all the marshmallows have melted, remove from heat and stir in matcha.
    1 tablespoon Matcha Powder
  • Pour marshmallow mixture over rice cereal mixture. Stir together.
  • Pour marshmallow mixture into a lined-square pan. Press down firmly to really pack in the cereal.
  • Let cool and harden, about 10 minutes.
  • Melt white chocolate chips in a microwave-safe bowl in 30-second increments until fully melted.
    3/4 cup White Chocolate Chips
  • Drizzle white chocolate over the top.
  • Let white chocolate harden and enjoy!
