No Churn Ice Cream
I love a no churn ice cream recipe because you really only need three ingredients! Each ice cream starts off with a base of heavy cream, sweetened condensed milk, and vanilla! From there, you can really experiment and add whatever flavorings you want to this recipe! From chocolate ice cream, to coffee ice cream, the options are endless! ?Throughout this recipe you might hear stiff peaks and soft peaks! This refers to how whipped you make the heavy cream! Soft peaks means if you take your mixer and turn it upside down, the whipped cream will form a mountain peak that will gently start to fall over on itself. Stiff peaks means if you flip the mixer upside down, the whipped cream will form a mountain peak that holds its shape! I prefer to mix this heavy cream to a stiff peak because as your folding in the sweetened condensed milk, the heavy cream will naturally deflate some! I think this gives the ice cream the perfect texture!
However, this is really up to you! If you prefer more of a soft-serve consistency, you can just whip the heavy cream to soft peaks! I like to check how my heavy cream is doing every few minutes just to make sure I don’t over-whip the heavy cream!

Substitutions and Additions:
This No Churn Mint Chocolate Chip Ice Cream with chocolate cookies has to be one of my favorite ice cream recipes! It has the perfect minty flavor with a sweet crunch from the cookies! Here are a few ways to enhance this recipe!
Chocolate Chips: For this recipe, I like to use a vegetable peeler to shave off bits of the chocolate into the ice cream mixture! I like the way the chocolate pieces sort of “melt” into the ice cream! However, to make this recipe easier, you can just add in chocolate chips or even chopped chocolate bars! If you don’t like the crunch of the chocolate, you could also swirl in hot fudge!
Chocolate Cookies: You can really use any kind of chocolate cookie in this recipe! From regular chocolate sandwich cookies, to thin wafer cookies, whatever chocolate cookie you have on hand works great in this recipe!
Equipment Needed:
Hand Mixer – I prefer to use an electric mixer when I’m whipping up the heavy cream to soft peaks! It makes it easy easier than trying to do it by hand! You can also use a stand mixer with the whisk attachment as well!
Freezer-Safe Container – I like to store my ice cream in a freezer-safe container to prevent any freezer burn! You can also just place plastic wrap over the top of your container and then add a layer of aluminum foil that’s tightly secured as well! I’ve done that with a loaf pan before and it works just as well!
Rubber Spatula – I like use a spatula to gently fold in my ingredients. After you’ve whipped the heavy cream, you don’t want to deflate any of that air, so be careful when you’re stirring the mixture together!

Storage Instructions:
To store this ice cream, I recommend putting the ice cream in an airtight freezer-safe container or mini pint sized containers. You can store this in the freezer for about 2-3 months!

Helpful Tips and Tricks
For this recipe, I prefer to use peppermint extract instead of mint extract. Mint extract can have a blend of different mints and can sometimes have a less intense flavor, which means you would have to add a lot to this recipe to get the same punchy flavor! Plus, I’ve found it’s easier to find peppermint extract at most grocery stores!
I like to add a few drops of green gel food coloring, since my favorite mint chip ice cream has that perfect green flavor! You can always leave this part out though!

Ingredients
- 14- oz can Sweetened Condensed Milk
- 2 cups Heavy Cream
- 1/2 teaspoon Peppermint Extract
- 1 cup Chocolate Mint Sandwich Cookies chopped
- 1/2 cup Chopped Chocolate
- Food Coloring optional
Instructions
- In a large bowl, whip heavy cream until it forms stiff peaks, about 3-4 minutes.2 cups Heavy Cream
- Then gently fold in sweetened condensed milk and peppermint extract.14- oz can Sweetened Condensed Milk, 1/2 teaspoon Peppermint Extract
- If you wanted to add a drop or two of food coloring, you can do that here!Food Coloring
- Take a chocolate bar and use a vegetable peeler to shave off chocolate into the ice cream mixture.1/2 cup Chopped Chocolate
- Then add in chopped chocolate mint sandwich cookies and gently fold together.1 cup Chocolate Mint Sandwich Cookies
- Pour the ice cream mixture into a baking dish, either a square or rectangle pan.
- Cover with plastic wrap and freeze for at least 6 hours, but overnight is best!
- After the ice cream is set, serve in an ice cream cone or a large bowl! Enjoy!
