Your favorite ice cream flavor meets cookie in these Phish Food Chocolate Cookies. This recipe is a soft and chewy chocolate cookie swirled with marshmallow fluff, sweet caramel, and chunks of dark chocolate! Even though it's delicious as an ice cream, it's even better in cookie form!
What is Phish Food!?
Before you freak out, yes, I did spell Phish Food right! Trust me, the first time I read that, it threw me off too! This ice cream flavor is made with chocolate ice cream, with swirls of caramel, marshmallow, and little chocolate fish.
I'm not sure where this crazy name comes from, but this flavor might be my favorite! The caramel, marshmallow, and chocolate is the ultimate flavor combination!
Chocolate Marshmallow Cookies
Chocolate and marshmallow has to be my favorite combination in this world, besides maybe chocolate and mint. But I think you get the idea here!
I like to use marshmallow spread instead of using actual marshmallows because the marshmallow cooks and browns quicker than the cookie dough, which means it can burn before the cookies are actually done baking.
To make this recipe easy, I use marshmallow spread in the cookie dough, which means you don't have to worry about the marshmallows burning and you get beautiful swirls of gooey marshmallow throughout the cookie!
However, if you really want to use marshmallows in this recipe (I get it, they're so delicious!), I would wait until the cookies are almost done baking before adding the marshmallow on top!
Caramel Swirled Cookie Dough
One delicious part about this cookie is the caramel swirls on top! It's a gooey final touch that makes these cookies shine!
When I was testing this recipe, I tried it three ways by adding the caramel drizzle to the cookie dough, on top of the cookie dough before baking, and adding a drizzle to the top after the cookies were done baking.
To get the perfectly, gooey caramel moment, I had the best results with adding the caramel drizzle to the top after the cookies were done baking!
Cookie Tips and Tricks
Even though, these cookies are pretty easy to make, I have a few tips to make these even easier!
I like to use a 2 ounce cookie scoop when scooping out the dough for a few reasons! First, it helps to ensure that all the cookies are the same size, which means they all cook at the same time so you don't end up with one cookie that's burned and another cookie that's still raw in the middle. Secondly, it makes the whole cookie scooping process a lot easier, and cleaner! Plus, I love getting those perfect little scoops of cookie dough!
I always use parchment paper when it comes to lining my cookie sheet. I firmly believe that there is nothing worse than your baked goods sticking to the pan after they're done baking! Because of that, I recommend using parchment paper to prevent any sticking from happening! I use this when I'm making cakes, brownies, you name it!
Also, parchment paper makes for an easy clean up with these cookies! Basically, I will always have parchment paper in my kitchen!

Phish Food Chocolate Cookies
Equipment
- 2 ounce Cookie Scoop
- Sheet Pan
Ingredients
- 1 stick Butter
- ¼ cup Sugar
- ¾ cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla
- ½ cup Cocoa Powder
- 1 cup Flour
- ¼ teaspoon Baking Soda
- ½ teaspoon Baking Powder
- ½ cup Dark Chocolate chopped
- ½ cup Marshmallow Spread
- ½ cup Caramel Drizzle
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together butter, sugar, and brown sugar. Mix until everything is smooth and creamy.1 stick Butter, ¼ cup Sugar, ¾ cup Brown Sugar
- Add in one egg and vanilla extract. Mix together.1 Egg, 1 teaspoon Vanilla
- Then, add in cocoa powder, flour, baking soda, and baking powder. On a low speed, mix all the dry ingredients to the dough.½ cup Cocoa Powder, 1 cup Flour, ¼ teaspoon Baking Soda, ½ teaspoon Baking Powder
- Add in chocolate to the dough and stir together with a spatula, making sure to scrape the bottom of the bowl to get everything mixed together.½ cup Dark Chocolate
- Drop dollops of marshmallow spread into the cookie dough and gently swirl with a knife. You want large swoops of marshmallow throughout the cookie dough.½ cup Marshmallow Spread
- Use a medium cookie scoop to scoop out the cookie dough and place on a parchment-lined baking sheet.
- Bake for about 12-14 minutes, the centers will still be slightly gooey.
- Then drizzle some caramel over the top of the cookies.½ cup Caramel Drizzle
- Let cool slightly, and enjoy!
