One night, I grabbed a mini pint sized ice cream and just sat at my counter with a spoon as the perfect midnight snack! I thought this would be the perfect idea to create a single serving recipe for ice cream! I have single serving recipes for cookies, muffins, but no ice cream… At least, until now!

This no churn chocolate ice cream is the perfect base for whatever flavors you like best! Add in peanut butter, graham crackers, white chocolate, even pretzels if you like!

No-Churn Ice Cream

No-churn ice creams are my absolute favorite ice cream to make! You don’t need any special equipment and it comes together so fast! Put away the eggs and machinery, you just need three base ingredients and a hand mixer!

Marshmallow Fluff

For this recipe, I prefer to use marshmallow fluff! Most of the time, I think you can get away with interchanging marshmallows with marshmallow fluff.

However, I don’t personally love the texture that marshmallows have when frozen. I like that the marshmallow fluff swirls throughout the ice cream easier than marshmallows would!

It’s up to you if you want to add marshmallows, but I would definitely recommend using mini versus large!

Ingredients

  • Heavy Cream
  • Cocoa Powder
  • Sweetened Condensed Milk
  • Vanilla Extract
  • Marshmallow Fluff
  • Dark Chocolate

Step-By-Step Instructions

  1. Step 1: Whip heavy cream to soft peaks.
  1. Step 2: In a small bowl, mix together sweetened condensed milk, cocoa powder, and vanilla.
  1. Step 3: Stir cocoa powder mixture into the heavy cream.
  1. Step 4: Mix together.
  1. Step 5: Add in chocolate chocolate.
  1. Step 6: Add to a container, alternating between ice cream and marshmallow fluff. Top with extra chocolate.

Hint: The cocoa powder mixture will get pretty thick, so you might need to use a hand mixer to mix the chocolate mixture with the heavy cream!

Variations and Substitutions

This Single Serve Dark Chocolate Marshmallow Ice Cream is pretty easy to make, but the base of this recipe has unlimited flavor combinations!

  • Caramel Goodness – add a caramel drizzle with the marshmallow fluff to get an extra layer of deliciousness.
  • Mint Extract – instead of vanilla extract, add a few drops of mint extract for a minty marshmallow ice cream!
  • S’mores – add some crushed graham crackers for a frozen take on s’mores!

Top tip

I like to add large swirls of marshmallow fluff and dark chocolate chunks to this ice cream, but the best part about this recipe is that you can use whatever fillings/toppings you like best!

Do I need an ice cream machine for this recipe?

Nope! The best part about this ice cream is that it’s ‘no-churn’ which means you only need a hand mixer to make this chocolatey dessert!

What type of cocoa powder should I use?

I like to use 100% cocoa, unsweetened when I’m looking for cocoa powder! You can use whatever brand you find, but make sure it’s unsweetened! And yes there’s a difference between cocoa powder and cacao powder!

Ingredients

  • 2/3 cup Heavy Cream
  • 3 tablespoons Cocoa Powder
  • 3 tablespoons Sweetened Condensed Milk
  • 1/4 teaspoon Vanilla Extract
  • 1/2 cup Marshmallow Fluff
  • 1/2 bar Dark Chocolate

Instructions

  • In a bowl, mix together sweetened condensed milk, cocoa powder, and vanilla. Set aside.
    3 tablespoons Cocoa Powder, 3 tablespoons Sweetened Condensed Milk, 1/4 teaspoon Vanilla Extract
  • In a large bowl, whip heavy cream until it forms stiff peaks, about 3-4 minutes.
    2/3 cup Heavy Cream
  • Then gently fold in sweetened condensed milk mixture.
  • Chop up chocolate bar into chunk and add into ice cream mixture.
    1/2 bar Dark Chocolate
  • Add 1/3 of the ice cream mixture to your container, then add some marshmallow fluff, then keep repeating until the top of the container! Place a skewer or knife in the ice cream and gently swirl.
    1/2 cup Marshmallow Fluff
  • Top with more chocolate chunks.
  • Then cover and place in the freezer for at least 4-6 hours but overnight is best!
  • After the ice cream is set, serve in an ice cream cone or a large bowl! Enjoy!
