Fall mornings just got a whole lot more cozy with these Pumpkin Pancakes with Cinnamon Butter! Soft, spongy pancakes with pumpkin puree, cinnamon, and pumpkin pie spice are full of autumnal flavor, topped with a dollop of cinnamon butter and drizzle of syrup!
Pumpkin Pancakes with Cinnamon Butter
I love starting my morning off with a big plate of steamy pancakes with a dollop of butter and a generous drizzle of syrup!
These pumpkin pancakes are full of fall flavors with pumpkin puree, cinnamon, pumpkin pie spice, and vanilla! I love how the cinnamon warms up the pumpkin puree and creates a warm and spicy pancakes.
Making your own flavored butter is actually super and makes a huge impact, especially on top of pancakes! This Cinnamon Butter is made with cinnamon, butter, and a few drops of maple extract! The maple extract adds extra warmth to the butter that pairs beautifully with the pumpkin pancakes.
Tips for Creating Perfect Pancakes
Here are some of my favorite tips for creating perfect pancakes every time!
- Don't overmix your batter! It's okay if there's still some clumps in your batter, this is going to create more bubbles to help get thick and delicious pumpkin pancakes!
- Let the batter rest for about 10 minutes before you bake off the pancakes. This allows the flour and leavening agents to absorb the liquids and create the perfect rise in your pancakes.
- Use a griddle! I love using a griddle to make my pancakes because you can make more at once. Most of the griddles are usually nonstick as well, so you don't have worry about your pancakes getting stuck!
- Use a cookie scoop to scoop out the batter. Using a cookie scoop helps control the amount of batter for each pancakes which helps create the same shape pancakes! This helps the pancakes all cook at the same time so they don't burn.

Pumpkin Pancakes with Cinnamon Butter
Ingredients
- 1 ½ cups Flour
- ¼ cup Sugar
- 2 teaspoons Baking Powder
- ½ teaspoon Baking Soda
- 2 teaspoons Pumpkin Pie Spice
- 1 teaspoon Cinnamon
- ¼ teaspoon Salt
- ¾ cups Milk
- 3 tablespoons Butter melted
- 2 Eggs
- 1 teaspoon Vanilla
- ½ cup Pumpkin Puree
Cinnamon Butter:
- ½ stick Butter room temperature
- 2 teaspoons Cinnamon
- ¼ teaspoon Maple Extract
Instructions
- In a large bowl, combine the flour, sugar, baking powder, baking soda salt, pumpkin pie spice and cinnamon. Whisk to combine.1 ½ cups Flour, ¼ cup Sugar, 2 teaspoons Baking Powder, 2 teaspoons Pumpkin Pie Spice, 1 teaspoon Cinnamon, ¼ teaspoon Salt, ½ teaspoon Baking Soda
- In a measuring cup, measure out milk. Mix in two eggs, pumpkin, and vanilla. Whisk together to break up the eggs and stir the ingredients together.¾ cups Milk, 2 Eggs, 1 teaspoon Vanilla, ½ cup Pumpkin Puree
- Combine the wet ingredients into the dry and mix one to two times.
- Then, add in the melted butter.3 tablespoons Butter
- Mix until just combined. It’s okay if there are some lumps in the batter because that helps the pancakes rise!
- Set the batter aside for about ten minutes.
- I use a griddle to cook my pancakes, but you can use a large skillet if you have one! Use a ¼ cup measure to scoop out some batter and pour onto a lightly buttered griddle.
- They cook for about 2-3 minutes on one side, or until you see bubbles rising to the top. Flip them over and cook for another minute or so.
- This batter makes about 12 pancakes, so cover the pancakes with a towel while you finish cooking the others so they stay nice and warm!
Cinnamon Butter:
- Mix together room temperature butter with cinnamon and maple extract.½ stick Butter, 2 teaspoons Cinnamon, ¼ teaspoon Maple Extract
- Add a scoop to the top of warm pancakes and drizzle in syrup.
- Store any leftover butter in the fridge!
- Serve and enjoy!
