What is a Cinnamon Vanilla Streusel Loaf?
Cinnamon and vanilla together has to be the ultimate comfort food combination! I remember my mom adding cinnamon to my pancakes, oatmeal, french toast. It's my ultimate comfort flavor.
I think of this loaf as a combination between coffee cake and vanilla pound cake. Soft and sweet like pound cake but the wonderful chew and streusel of a coffee cake.
The cinnamon streusel on top is the a little kiss of cinnamon that creates the perfect crust. It's perfect for breakfast with a vanilla latte, an afternoon snack with a bowl of fruit, or warmed up slightly and served with a scoop of ice cream. Honestly, I could eat this three times a day and still not be tired of it.
Oil + Butter = Perfection
This recipe calls for a mixture of oil and butter, which might seem redundant but I promise you there's a reason for both.
Almost like how brown sugar and granulated sugar both play a part in delicious cookies, adding oil and butter is the power duo behind adding flavor and moisture to this loaf.
Butter adds flavor as well as adding structure and texture to a loaf. Butter is the leading factor of creating different textures in desserts depending on what ingredients it's mixed with and what temperature the butter is. Think of pie crust that requires the butter to be super cold and gently mixed into pie dough, which creates a flakey texture. Then, think of cookies that require butter to be melted or room temperature and allows the butter to fully incorporate into the dough, which creates a chewy texture.
Adding oil instead of butter adds moisture. Oil is a liquid therefore it's going to add more moisture and create a softer texture than just butter. However, oil lacks the delicious butter flavor we all know and love.
Adding a combination of both creates the flavor and structure of butter with the added moisture of the oil.
Tips for Making Vanilla Bread Perfection
This recipe is pretty easy to follow, but here are my favorite tips for making this vanilla bread into a dessert you'd want to make every week!
- Make sure the spray the loaf pan with a nonstick spray, then add in the parchment paper. I like doing both for two reasons: One, the parchment paper helps get the loaf out easier. Two, the nonstick spray helps make sure that any batter that leaks through the cracks doesn't stick. It's basically my insurance policy that the loaf will easily slide out of the pan.
- Add half the flour mixture into the butter mixture first, then when that's 90% incorporated, add in the milk mixture. After the milk mixture is fully mixed, you can add the remaining flour. Alternating the dry and wet ingredients allows for everything to fully mix together which creates a smoother cake.

Vanilla Streusel Loaf
Equipment
- 1 9-inch Loaf Pan
- Parchment Paper
- Nonstick Spray
Ingredients
- 6 tablespoons Butter room temperature
- 2 tablespoons Oil
- ⅔ cups Sugar
- ¼ cup Brown Sugar
- 2 Eggs
- 1 teaspoon Vanilla Extract
- ⅓ cup Milk
- ⅓ cup Yogurt
- 1 ½ cups Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Cinnamon
Streusel Topping:
- ⅓ cup Sugar
- 1 tablespoon Cinnamon
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, combine butter, sugar, and brown sugar.6 tablespoons Butter, ⅔ cups Sugar, ¼ cup Brown Sugar
- Mix until smooth and creamy.
- Add in eggs, oil, and vanilla extract. Mix everything together.2 tablespoons Oil, 2 Eggs, 1 teaspoon Vanilla Extract
- In a separate bowl, mix together flour, baking powder, and cinnamon.1 ½ cups Flour, 2 teaspoons Baking Powder, 1 teaspoon Cinnamon
- In a measuring glass, mix together milk and yogurt.⅓ cup Milk, ⅓ cup Yogurt
- Into the butter mixture, pour in half of the flour mixture. Stir until the flour is just combined.
- Then pour in the milk mixture, and mix together.
- After the milk mixture is fully mixed in, add in the remaining flour.
- Pour the batter into a lined loaf pan, smoothing out the top.
- In a small bowl, mix together sugar and cinnamon.⅓ cup Sugar, 1 tablespoon Cinnamon
- Sprinkle a generous amount of the cinnamon sugar to the top.
- Bake for 40-50 minutes, until a toothpick inserted comes out clean.
- Let cool slightly, and enjoy!

I use a mixer but you could definitely do it by hand if you wanted to get an arm workout in there!
