You know, cheesecake is never at the top of my list. I think I really just forget about it as a dessert, which is really sad. Because once I do have a slice of delicious cheesecake with some whipped cream on top, I thoroughly enjoy it!
Cheesecake can be slightly finicky to make in the oven. You have to be careful about the top cracking and burning the top, while still making sure it’s cooked through.
I think that’s one of the reasons I like these Cheesecake-Stuffed Red Velvet Cookies so much; you get all the delicious cheesecake flavor with a fraction of the work. Who doesn’t love that!?
The cheesecake filling is very simple, just cream cheese, powdered sugar, and vanilla! The trick is to put the cheesecake filling in the freezer to firm up before adding to the cookie dough. To make things really easy, I like to scoop out little dollops of cheesecake filling and then freeze. It helps make assembly way easier!

I love these red velvet cookies! It’s a spin off of my original Red Velvet Cookies that I linked here!
They use a box cake mix which makes these cookies so easy to make. You just need three ingredients and you get the softest, cake cookie you’ve ever had!
I love that you can transform this cake mix into so many different things! I like to always have a few different cake mixes in my pantry. You never know when you’ll need one, right!?
The red velvet is a really delicious pairing with the cheesecake, but you can get really creative with the cake mix you use!
This cheesecake filling would also be really delicious with carrot cake mix. That would actually be really delicious for Easter…. I might need to remember that!
Or you could use chocolate, vanilla, or sprinkle! There’s a ton of different choices, so don’t feel like you have to do red velvet!

Tips and Tricks
I recommend scooping out the cheesecake filling and freezing before adding to the cookie dough. I think it helps not make such a mess when you’re making the cookies. It also helps make sure you can really cover the cheesecake with the cookie dough, so you don’t have to worry about any cheesecake popping out!
If you wanted to get extra fancy, you could sprinkle a few white chocolate chips on top to really make these cookies shine!

Cheesecake Stuffed Red Velvet Cookies
- 1 box Red Velvet Cake Mix
- 1/3 cup Flavorless Oil
- 2 Eggs
- 1 block Cream Cheese softened
- 1/2 cup Powdered Sugar
- 1 teaspoon Vanilla Extract
Making the Cheesecake Filling:
- To the bowl of a mixer, add in cream cheese, powdered sugar, and vanilla extract. Whip together.
- Take a small scoop of the cheesecake and put on a piece of parchment paper. Then put in the freezer for about 10 minutes.
Making the Cookies:
- Preheat the oven to 350 degrees.
- In a large bowl, mix together cake mix, eggs, and oil.
- Take a scoop of cookie dough and put on a cookie sheet. Press the cheesecake into the center. Then scoop a little bit more cookie dough on top.
- Bake in the oven for about 15-18 minutes.
- Let cool and enjoy!
