This Citrus cake is a spin on a classic upside-down cake! Instead of pineapple and cherries, think bright orange flavors! It's a perfect cake for those gloomy winter days where we're all counting down the days until spring comes!
The trick with making an upside down cake is to make sure you really grease the pan well to prevent anything from sticking! I like to use a nonstick spray and then layer in parchment paper. This helps make sure I can easily remove everything from the pan.
I like to layer a few different types of citrus on the bottom of the cake, then I pour in this light and airy almond cake batter that pairs beautifully with the citrus. It's a light and airy cake that is addicting!

I know everyone typically thinks of citrus with spring, but there's actually a few different types of citrus that are perfect for those colder months!
In this recipe, you could use blood oranges, oranges, grapefruit, clementines, or tangerines, just to name a few! There's definitely a ton of options for you to choose from!
I just used oranges and blood oranges for this cake, but you could use whichever flavors you like best or whatever looks the best at your local supermarket!

Winter Citrus Cake
Ingredients
- ⅓ cup Oil
- 1 cup Sugar
- 1 Orange Zested
- 2 Eggs
- 2 tablespoons Greek Yogurt
- 1 teaspoon Vanilla Extract
- ⅛ teaspoon Almond Extract
- 1 cup Flour
- ½ cup Almond Flour
- 1 teaspoon Baking Powder
- 3-4 Oranges, Blood Oranges, Grapefruit
- 1 tablespoon Simple Syrup
Simple Syrup:
- 2 tablespoons Sugar
- 2 tablespoons Water
Instructions
- Preheat oven to 350 degrees. Grease a 9-inch cake pan and layer with parchment paper on the bottom.*
- In a large bowl, add sugar and orange zest. Use your hands to massage the zest into the sugar.1 cup Sugar, 1 Orange
- Then add in eggs, and beat together until light and fluffy.2 Eggs
- Add in oil, Greek yogurt, vanilla extract, and almond extract. Stir everything together.⅓ cup Oil, 2 tablespoons Greek Yogurt, 1 teaspoon Vanilla Extract, ⅛ teaspoon Almond Extract
- Then mix in flour, almond flour, and baking powder.½ cup Almond Flour, 1 teaspoon Baking Powder, 1 cup Flour
- Once all the dry ingredients have been mixed together, set aside.
- Cut the oranges in slices by peeling the rind off and then cutting into slices.3-4 Oranges, Blood Oranges, Grapefruit
- Into the cake pan, pour a little splash of simple syrup on the bottom and brush it around.1 tablespoon Simple Syrup
- Then layer in the orange slices however you would like!
- Gently pour in the batter and smooth out the top.
- Bake for about 45-50 minutes, until a toothpick inserted comes out clean and the top is a nice golden color.
- Let cool for about 30 minutes before inverting on a cake plate.**
- Then serve with a dollop of whipped cream and enjoy!
Simple Syrup:
- Combine water and sugar in a microwave-safe bowl.2 tablespoons Sugar, 2 tablespoons Water
- Microwave for about 30 seconds until the sugar is mostly dissolved. Stir together.
