I am a total sucker for adding marshmallows to cookies! (For example, these Rice Krispie Treat Cookies that are my all-time favorite!) When I was thinking of the perfect holiday cookie, I knew I wanted to combine hot chocolate and peppermint together! But we all know the best part of the hot chocolate is the melty marshmallows on top!
This recipe comes together in less than thirty minutes and is perfect for your next holiday gathering! They're perfect for making ahead and taste just as delicious the next day!

Chocolate Cookies
This is my go-to recipe for thick and chewy chocolate cookies! It's a perfect base for double chocolate chip cookies, stuffed cookies, you name it!
This recipe uses cocoa powder to get that perfect dark chocolate flavor! I use 100% cocoa powder which you can find in most grocery stores in the baking aisle! When you're looking for cocoa powder, make sure you buy unsweetened. We'll be adding enough sugar later!
Marshmallows vs Marshmallow Fluff
For this recipe, I love to use large marshmallows to get a perfect, chewy marshmallow in the middle! However, this part is up to you! You can add mini marshmallows, large marshmallows, or even add a few swirls of marshmallow fluff to the top of the cookie dough!

Step-By-Step Instructions
- Step 1: Mix together butter, sugar, and brown sugar. Then add in egg and vanilla.
- Step 2: Then add in flour, cocoa powder, and baking powder.
- Step 3: Scoop out the cookie dough.
- Step 4: Add a large marshmallow to the middle.
- Step 5: Then roll the top in chocolate chips.
- Step 6: Either top with peppermint pieces or add them to the top after baking!
Hint: I like to put the peppermint pieces on after I bake them! So they don't melt in the oven!
Variations and Substitutions
There's nothing better than hot chocolate with the melty marshmallows on top! These Peppermint Marshmallow Hot Chocolate Cookies are perfect for snacking during holiday movies! Here are a few variations:
- Espresso Powder - add a few teaspoons of espresso powder to these cookies for a little extra *something, something*!
- Extra Peppermint - add a few drops of mint extract into your cookies for some more peppermint flavor!
- White Chocolate - sub out white chocolate chips on top for a fun twist!

Baking Sheet - You'll need a big baking sheet for the recipe to make sure you give the cookies plenty of space when they're baking!
Parchment Paper - I love to use parchment paper when I'm baking so I don't have to worry about the cookies getting stuck to the baking sheet!
Cookie Scoop - For this recipe, I use a 2-oz cookie scoop to make sure all of my cookies bake up evenly! This would be the medium sized cookie scoop if you have a set of three! You can find a set similar to the one I use here!
Top tip
Let a little of the marshmallow poke out the top of the cookie dough to get a really pretty marshmallow moment when the cookies bake down!
Storage
- Room Temperature - store in an airtight container for about 2 days!
- Fridge - store in an airtight container for about 3-4 days.
- Freezer - store cookie dough balls in the freezer without the marshmallows for about 3-4 months. Then when you're ready to use, let thaw in the fridge, then start at Step 5 in the recipe directions!
FAQ
Yes! You can use milk chocolate, semi-sweet, or dark chocolate! I used mini semi-sweet chocolate chips!
Yes! If you use mini marshmallows, I would put three or four in the cookie dough to get a really good marshmallow pull!

- Baking Sheet
- Parchment Paper
Ingredients
- 1 stick Butter room temperature
- ¼ cup Sugar
- ¾ cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla
- ½ cup Cocoa Powder
- 1 ¼ cup Flour
- ½ teaspoon Baking Powder
- 12 Large Marshmallows
- ½ cup Peppermint Candies chopped
- ½ cup Mini Chocolate Chips semi-sweet
Instructions
- Preheat oven to 350 degrees.
- In a bowl, cream together butter, sugar, and brown sugar.1 stick Butter, ¼ cup Sugar, ¾ cup Brown Sugar
- Then mix in egg and vanilla.1 Egg, 1 teaspoon Vanilla
- Add in cocoa powder, flour**, and baking powder. Mix everything together.½ cup Cocoa Powder, 1 ¼ cup Flour, ½ teaspoon Baking Powder
- Then scoop out a ball of cookie dough and flatten in your hand. Add one large marshmallow, then wrap the cookie dough around the marshmallow. Roll the cookie dough in the chocolate chips and top with a few peppermint pieces.12 Large Marshmallows, ½ cup Peppermint Candies, ½ cup Mini Chocolate Chips
- Place on a baking sheet about 3 inches apart* and bake for about 15 minutes.
- Let cool slightly and enjoy!
