Why have a boring butter croissant when you can have these Almond Croissants filled with a sweet almond paste and topped with extra sliced almonds and a sprinkle of powdered sugar?? No shade to regular croissants though, these are just a little bit better! Try it and you'll see what I mean!
What's This Almond Filling?
The first time I had an almond croissant was actually in Paris! Which was really a fantastic place to try out new croissant flavors. I definitely recommend it if you can!
But if a trip to Paris isn't in the cards right now, no worries! These Almond Croissants are delicious enough all on their own.
This almond filling is made with almond flour and almond extract to give a beautiful almond flavor without being overpowering! I love adding almond flour because the texture is still a little bit nutty and gives a beautiful almond flavor. Adding a few drops of almond extract really pulls this all together!
If you haven't used almond extract before I definitely encourage you to try it for this recipe! It's a beautiful, bright flavor that I love adding to vanilla cakes to help enhance the vanilla! Almond extract is a very potent extract though, so you really only need a few drops to give the perfect flavor!
Homemade or Store-bought?
It is no secret that I adore a store-bought shortcut. Store-bought shortcuts can save time, money, energy, frustration, and can make the whole recipe ten times easier.
This recipe can be done in less than 30 minutes by using store-bought croissants! When it comes to what croissants to buy, make sure to buy a brand that you love all by itself! You'll still be able to taste the flavor of the croissant, so make sure it's one you like!
You could even stop by a bakery and buy their day old croissants for a slightly cheaper price! This recipe works even better if the croissants are a few days old!
But if you love taking the time to proof your own croissant dough and shape them on your own, please do so! I won't rob anyone the joy of baking all day in the kitchen!
Does Any Nut work?
I never want to stop anyone from experimenting with my recipes and I love seeing all the different ways one recipe can be changed! However, I haven't tried any other nuts, so I can't say for sure how it would go!
In theory, you could just grind your own nuts down to create a new nut flour and use that in it's in place. I haven't tried it yet, so I'm not sure how the consistency would change!
I plan on testing out a few different variations in the future because a pistachio croissant sounds just heavenly, doesn't it?!

Almond Croissants
Ingredients
- 8 Store-bought Croissants
- 1 cup Almond Flour
- ½ cup Sugar
- 1 teaspoon Almond Extract
- ½ teaspoon Vanilla Extract
- 1 Egg
- 6 tablespoons Butter room temperature
- ½ cup Sliced Almonds
- Powdered Sugar for dusting
Instructions
- Preheat oven to 375 degrees.
- In a bowl, mix together almond flour, almond extract, vanilla extract, butter, sugar, and egg until it forms a paste.
- Cut the croissants in half lengthwise. Spread about 2 tablespoons of the mixture on the bottom half of the croissant.
- Put the top half back on and spread another half tablespoon on top. Place a few sliced almonds on top.
- Bake in the oven for about 10-15 minutes.
- Dust with a little powdered sugar and enjoy!
