No winter night is complete without a bowl of warm Chicken Noodle Soup. This soup is loaded up with veggies, pasta, and delicious flavor! I firmly believe that this soup is good for the soul, especially with a loaf of crusty bread and a glass of wine.
Chicken Noodle Soup for the Soul
We all remember our moms making us some form of chicken noodle soup every time we were sick. There's so many different variations of this soup that it's so hard to pick just one!
This Chicken Noodle Soup is a quick soup that comes together in 30 minutes or less! To make this soup even quicker, I like to use store-bought shredded chicken to add to the soup! This reduces the cook time by like 20 minutes! If you don't want to buy pre-shredded chicken, or you can't find it, you can always add the raw chicken to the soup and cook it fully before adding in the pasta. This will change the cook time, but keeps this soup a one-pan-wonder!
The other addition to this soup that I love is the squeeze of lemon juice at the end! It's a bright finish that helps wake up the flavors of the soup! You'll notice it if you skip it, so be sure to add it!
Oodles of Noodles
I am a firm believer that ever shape of pasta has its rightful place in our pantries! For this soup, I wanted to use a fun shape of pasta as opposed to the typical egg noodles that are found in Chicken Noodle Soup! I'm also not the biggest fan of egg noodles, so I do try to find replacements for them in my cooking!
However, this is when you get the opportunity to take this soup and make it your own! If you love egg noodles, add them instead!
If you love the little corkscrew pastas, use those instead! This soup is your pasta oyster, so feel free to use whatever pasta you have in your pantry or whatever pasta makes you the most happy!
Just try to keep in mind that you'll be eating this soup with a spoon, so the longer the noodle you add, the trickier it could be to eat!

- Celery
- Onion
- Garlic Cloves

Chicken Noodle Soup
Ingredients
- 1 ½ cups Carrots
- ½ cup Celery
- 1 Onion diced
- 4 Garlic Cloves grated
- 2 tablespoons Olive Oil
- 2 Chicken Breasts cooked and shredded
- 1 teaspoon Dried Thyme
- 2 Bay Leaves
- 1 Lemon
- 1 Parmesan Rind
- 1 1/12 cups of Pasta
- 6-8 cups Chicken Stock
- Parsley for garnish
- Salt and Pepper to taste
Instructions
- In a large pot, drizzle in olive oil over a medium heat.2 tablespoons Olive Oil
- Add in chopped onions and saute for about 2-3 minutes, until lightly golden.1 Onion
- Add in garlic cloves, celery, and carrots. Cook for 5 minutes.1 ½ cups Carrots, ½ cup Celery, 4 Garlic Cloves
- Add in dried thyme and cook for another minute.1 teaspoon Dried Thyme
- Pour in chicken broth, then add in bay leaves, parmesan rind, and bring to boil.2 Bay Leaves, 1 Parmesan Rind, 6-8 cups Chicken Stock
- Once the soup is boiling, add in pasta.1 1/12 cups of Pasta
- After the pasta is done cooking, 10-15 minutes depending on the pasta shape, add in shredded chicken.2 Chicken Breasts
- Add in salt and pepper to taste, then a squeeze of lemon juice and some chopped parsely.1 Lemon, Parsley for garnish, Salt and Pepper
- Serve and enjoy!
