This warm and hearty Chicken and Rice Soup is perfect for chilly winter days! It's full of carrots, celery, chicken, and rice to create a healthy but filling dinner. This recipe comes together so fast and is perfect for any weeknight dinners!

Chicken and Rice Soup

Chicken noodle soup is delicious but my favorite comfort food has to be Chicken and Rice Soup! I love the creaminess of the soup mixed with the carrots and the rice! It's a warm and comforting soup that is still hearty and filling!

All of the best soups start off with celery, onion, and carrots. I add plenty of garlic and chicken stock which creates the ultimate broth to cook the rice in. The rice absorbs all the flavor from the broth as well as the soy sauce and Worcestershire sauce. The soy sauce adds such a salty depth of flavor that pairs beautifully with all the other flavors!

Because the soy sauce adds saltiness, be sure to taste the soup before adding more salt!

Substitutions and More!

To make this soup for everyone to enjoy, I have a few substitutions you can do to this recipe!

  1. If you would like to make this a vegetarian recipe, omit the chicken completely! Replace the chicken stock with vegetable stock, then add in mushrooms the same time as all the other vegetables. This creates a warm and filling soup with no meat!
  2. If you would like this recipe to be dairy-free, you can omit the butter and substitute with more olive oil. Then replace the heavy cream with unsweetened coconut cream or another dairy-free milk of choice!
  3. If you can't find rosemary or thyme, you can omit these and just add in a tablespoon of Italian seasoning!

  • Carrots
  • Celery
  • Onion
  • Butter
  • Olive Oil
  • Flour
  • Thyme
  • ½ tablespoon Rosemary
  • Garlic
  • Soy Sauce
  • Worcestershire Sauce
  • Shredded Chicken Breasts
  • Rice
  • Chicken Stock
  • Heavy Cream
  • Salt and Pepper

This Chicken and Rice Soup has to be one of my favorite dinners to make! Not only does this recipe come together in 30 minutes, the leftovers are just as delicious!

Ingredients
  

  • 1 ½ cups Carrots
  • ½ cup Celery
  • 1 Onion diced
  • 2 tablespoons Butter
  • 2 tablespoons Olive Oil
  • ¼ cup Flour
  • ½ tablespoon Thyme chopped
  • ½ tablespoon Rosemary chopped
  • 2 cloves Garlic
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Worcestershire Sauce
  • 2 Chicken Breasts shredded
  • 1 cup Rice
  • 6 cups Chicken Stock
  • ½ cup Heavy Cream
  • Salt and Pepper to taste

Instructions
 

  • In a large pot on the stove, add butter and olive oil over a medium heat.
    2 tablespoons Butter, 2 tablespoons Olive Oil
  • Add in chopped onion, celery, and carrots. Cook for about 5 minutes.**
    1 ½ cups Carrots, ½ cup Celery, 1 Onion
  • Add in grated garlic and cook for another minute longer.
    2 cloves Garlic
  • Add in flour, thyme, and rosemary and cook for about 3 minutes.
    ¼ cup Flour, ½ tablespoon Thyme, ½ tablespoon Rosemary
  • Then, pour in chicken stock, soy sauce, Worcestershire sauce and bring to a soft boil.
    1 tablespoon Soy Sauce, 1 teaspoon Worcestershire Sauce, 6 cups Chicken Stock
  • Add in rice, reduce heat to medium-low and cover. Cook for about 15- 20 minutes, until the rice is fully cooked! Stir occasionally to make sure the rice doesn't stick to the bottom.
    1 cup Rice
  • After the rice is done cooking, add in the shredded chicken breast and stir in heavy cream.
    2 Chicken Breasts, ½ cup Heavy Cream
  • Add salt and pepper to taste.
    Salt and Pepper
  • Serve in large bowls with a side of crusty bread!

Notes

**To make this recipe easier, I like to use shredded chicken breast from the store. You can either use a rotisserie chicken or make the chicken ahead of time. If you'd like to cook the chicken at the same time as the soup, chop the raw chicken into small pieces and add to the pot the same time as the onion, celery, and carrots. Cook until the chicken is fully cooked before moving on to the next time. Please note that this will change the final cook time!
