This warm and cozy Crockpot Pumpkin Chili is the perfect dinner for a chilly weeknight. It's full of hearty vegetables and warm spices. Nothing is better than knowing a warm crockpot of delicious pumpkin chili is waiting for you after a long day!

What is Crockpot Pumpkin Chili?

This Crockpot Pumpkin Chili is smooth and creamy and loaded up with vegetables! The chili base starts off with garlic, onions, and ground turkey! Then it's added to a crockpot with sweet potatoes, carrots, celery, and green peppers! I add a whole can of pumpkin straight into the crockpot!

This dinner is a healthy and hearty meal perfect for any busy weeknights or chilly weekends! I love setting this crockpot dinner up in the morning and knowing that I have dinner ready that night!

The warm and cozy smells from this chili fill up your house! It's a mouthwatering combination!

Tips and Tricks

  1. If you wanted to make this dinner even easier, you could just buy the pre-chopped veggies at the grocery store! That would help cut down on a prep time for this recipe!
  2. Be sure to fish out the bay leaves after the chili is done cooking! While bay leaves are flavorful, they're not that delicious to eat!
  3. I love to get all of my toppings for the chili prepped and in little bowls! It turns this dinner into a fun chili bar! I love to add all the toppings to mine! Feel free to experiment with which toppings you like best!

Crockpot Pumpkin Chili

This warm and cozy Crockpot Pumpkin Chili is full of hearty vegetables and warm spices and is the perfect dinner for a chilly weeknight!

Ingredients
  

  • 2 tablespoons Olive Oil
  • 2 pounds Ground Turkey
  • 1 Onion
  • 3 cloves Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • ½ teaspoon Chili Powder
  • 2 Bay Leaves
  • 2 Sweet Potatoes
  • 2 cups Carrots
  • 1 can Chickpeas drained
  • 1 can Cannellini Beans drained
  • 1 cup Celery
  • 1 can Pumpkin
  • 2 Green Peppers
  • 3 cups Chicken Broth
  • 1 cup Wine
  • ¼ cup Water
  • ¼ cup Flour
  • Salt and Pepper to taste
  • Cilantro garnish
  • Avocado garnish
  • Shredded Cheese garnish
  • Sour Cream garnish

Instructions
 

  • In a large skillet on the stove, add a drizzle of olive oil and chopped onions.
    1 Onion, 2 tablespoons Olive Oil
  • Let for about 2 minutes, before adding in grated garlic cloves and ground turkey.
    2 pounds Ground Turkey, 3 cloves Garlic
  • Then add in cumin, oregano, paprika, and chili powder.
    1 teaspoon Cumin, 1 teaspoon Oregano, 1 teaspoon Paprika, ½ teaspoon Chili Powder
  • Let the turkey cook for about 7-10 minutes, until fully cooked.
  • In the meantime, peel and chop sweet potatoes and carrots. Chop up celery and green peppers. Drain the chickpeas and cannellini beans.
  • In the crockpot, add in the ground turkey mixture.
  • Then add in sweet potatoes, carrots, celery, green peppers, chickpeas, and cannellini beans.
    2 Sweet Potatoes, 2 cups Carrots, 1 can Chickpeas, 1 can Cannellini Beans, 1 cup Celery, 2 Green Peppers
  • Add in pumpkin puree, chicken broth, wine, and bay leaves.
    2 Bay Leaves, 1 can Pumpkin, 3 cups Chicken Broth, 1 cup Wine
  • Add in salt and pepper, the stir everything together.
    Salt and Pepper
  • Cover and cook on low for 6-8 hours or high for 4-6 hours.
  • In the last 30 minutes, make a slurry combining the water and flour. Pour into the crockpot and stir.
    ¼ cup Water, ¼ cup Flour
  • After the chili is done, serve in a large bowl with some avocado slices, a sprinkle of cheese, a dollop of sour cream, and some cilantro!
