Everything you love about cookie dough stuffed inside a buttery croissant then baked until golden brown! It's the perfect use for leftover croissants and turns them into something even better!
What are Chocolate Chip Cookie Croissants?
Chocolate Chip Cookie Croissants are the perfect mashup of a chocolate croissant and cookie dough! To make this recipe, you take a day old croissant, add a little dollop of cookie dough inside the croissant, then close it up. I like to add a little more cookie dough to the top of the croissant, then bake until golden brown.
The croissant gets all nice and crispy while the cookie dough is soft and chewy on the inside. It's such a delicious combination without being overly sweet.
Types of Cookie Dough
This recipe uses my favorite Single Serve Cookie Recipe. I love this recipe because it uses such a small amount of ingredients and you end up with just enough cookies for you and you alone! I mena, I guess you could share one, but why would you want to!?
This batch makes the perfect amount of cookie dough to add in the croissants. The trick for this recipe is not overfill the croissants. If you put too much cookie dough in the croissants, the cookie dough won't bake as fast as the outside of the croissant will. We want the inside to be soft, but not raw!
If you want to make this recipe even easier, you could use store-bought cookie dough too!

Chocolate Chip Cookie Croissants
Equipment
- Baking Sheet
- Offset Spatula
Ingredients
- 2 tablespoons Butter room temperature
- 3 tablespoons Brown Sugar
- ¼ teaspoon Vanilla Extract
- 1 Egg Yolk
- ⅓ cup Flour
- ⅛ teaspoon Baking Powder
- 2 tablespoons Chocolate Chips
- 6 Mini Croissants
- Powdered Sugar for garnish
Instructions
- Preheat oven to 350 degrees.
- Add butter, brown sugar, and vanilla extract to a bowl and mix together.2 tablespoons Butter room temperature, 3 tablespoons Brown Sugar, ¼ teaspoon Vanilla Extract
- Add in egg yolk and mix until everything is combined.1 Egg Yolk
- Stir in flour and baking powder.⅓ cup Flour, ⅛ teaspoon Baking Powder
- Mix in chocolate chips.2 tablespoons Chocolate Chips
- Cut croissants in half lengthwise. Scoop about a tablespoon of cookie dough and spread it on the inside of the croissant.6 Mini Croissants
- Close up the croissant again, then add a little smear of cookie dough on the top of the croissant.
- Bake for about 12-14 minutes.
- Let the croissants cool slightly, the sprinkle over powdered sugar.Powdered Sugar
