'Tis the season for ginger
Ginger is always a favorite in my household, but there’s something about ginger in the winter months that really just hits different! Hello, Gingerbread Cookies, I’m looking at you!
If you are unfamiliar with ginger, it’s a warm spice that can have a very powerful flavor. I personally love the spicy heat of ginger, but if you are new to it, I recommend starting slow. If you’ve ever had an old fashioned ginger drink, you know what I’m talking about it.
To help calm the heat of ginger, I like to pair it with equally bold flavors. Adding ginger to vanilla is delicious, but vanilla can be a little bit lighter and the ginger could easily overpower it.
Pairing ginger with flavors like cinnamon or chocolate work well as they are both strong flavors themselves!
In these cookies, the chocolate and cinnamon help calm the ginger while still letting the ginger be front and center. It ends up having the perfect hit of ginger without being too much!
Short cut wins
If you know me, you know I love a shortcut! Delicious cookies in half the time? I’m in.
Honestly, cake mix is a really underrated ingredient. In fact, it’s always a staple in my pantry because it’s so versatile! You can use a boxed cake mix to make cake (obviously), cookies, biscotti, and muffins!
It might seem weird that a cake mix can make so many different things, but cake mix actually includes most of the crucial ingredients to any baked goods: flour, sugar, and a leavening agent. All you have to do is change up the liquid and egg binder ratio and you can have four different desserts!
Pretty crazy, right?!
For these Chocolate Gingersnap Cookies, I used chocolate cake mix. No shock there, right? However, you can definitely change this flavor combination up! I think it would be really delicious using a spice cake mix too! Or even a simple vanilla will really help the ginger shine! But I like chocolate best because I think it really highlights the spice of the ginger!
Chocolate Gingersnap Cookies tips and tricks
My biggest tip for these cookies is to make sure you buy the right cake mix! It’s a pretty easy step but it can change the outcome of the cookies in a big way! Make sure that the cake mix you are buying doesn’t have pudding in the mix.
A lot of cake mixes will add in a pudding mix to help the cake be extra moist but we don’t want that for these cookies! We need these cookies to form a firm dough so you can roll it in the sugar!
My second tip is to experiment with the ginger some! If you are a ginger lover like me, add that whole tablespoon! If you are a little bit on the fence with ginger or you haven’t really had it too often, I would add a little bit less!

I don’t know about you, but there’s just something about a cookie being rolled in sugar that really makes my mouth water.
The chocolate with the spice of the ginger is a beautiful combination and perfect for this time of year! Or every time of the year, if you ask me!

Chocolate Gingersnaps
Ingredients
- 1 box Chocolate Cake Mix no pudding added
- ⅓ cup Flavorless Oil
- 2 Eggs
- 1 tablespoon Ground Ginger
Rolling Sugar:
- ½ cup Sugar
- ½ teaspoon Cinnamon
- ¼ teaspoon Ground Ginger
Instructions
- Preheat oven to 350 degrees.
- Whisk together eggs and oil.
- Add in cake mix and ground ginger.
- In a separate bowl, combine sugar, cinnamon, and ground ginger.
- Take a scoop of cookie dough in your hand and roll it into a ball. Then roll it in the sugar mixture.
- Place cookie dough on a parchment-lined baking sheet.
- Bake for about 13-15 minutes.
- Enjoy!
