These Buckeye Cookies are pretty delicious all on their own, but here are a few ways to spice up this recipe!
Types of Chocolate: I prefer to use a semi-sweet chocolate with this recipe, as there’s already a decent amount of sugar in this recipe! However, you can use dark chocolate or even white chocolate chips would be delicious in this recipe! You can also use milk chocolate if you prefer!
Add Some Crunch: These cookies are soft and chewy with a creamy peanut butter middle, so if you want to add some crunch to these cookies, that would be delicious! You can add some chopped peanuts to the top of the melted chocolate or add a pinch of flaky sea salt!
Types of Nut Butters: You can also sub out the peanut butter for other types of natural peanut butters or even use other types of nut and seed butters in this recipe!

Cookie Scoops – Having multiple cookie scoops is great especially for recipes like this, I have a set of three cookie scoops! I use the small cookie scoop of the peanut butter, and then the medium cookie scoop for the cookies! That way everything is the same size and bakes up at the same time!

Step by Step Instructions:

Step 1.On a piece of parchment paper, scoop out balls of peanut butter and place in the freezer.

Step 2. In a mixing bowl, combine butter, brown sugar, and sugar. Then mix in egg and vanilla extract.

Step 3: Add in the dry ingredients to the wet ingredients.

Step 4. Scoop out the cookie dough and flatten in your hand, then add a frozen peanut butter ball in the center of each cookie. Wrap the cookie dough around the peanut butter filling and place cookie dough on a parchment lined baking sheet. Then, bake for about 15 minutes.
Storage Instructions:
Store these cookies in an airtight container at room temperature for about 4-5 days!
If you want to freeze these cookies, I recommend freezing them after stuffing them with the peanut butter! Then you can bake the cookies off like normal and add the melted chocolate.

Helpful Tips and Tricks
I prefer to use salted butter in all my baking recipes, however if you use unsalted butter, I recommend adding a 1/4 teaspoon of salt to your recipe! Basically, It just helps balance out the sweetness of the cookies!

Ingredients
- 1 stick Butter room temperature
- 1/4 cup Sugar
- 3/4 cup Brown Sugar packed
- 1 Egg
- 1 teaspoon Vanilla
- 1/2 cup Cocoa Powder
- 1 cup Flour
- 1/2 teaspoon Baking Powder
- 1/2 cup Peanut Butter
- 1/2 cup Chocolate Chips melted
Instructions
- On a piece of parchment paper, place little dollops of peanut butter. Place in the freezer for 30 minutes.1/2 cup Peanut Butter
- Preheat oven to 350 degrees.
- In a bowl, cream together butter, sugar, and brown sugar.1 stick Butter room temperature, 1/4 cup Sugar, 3/4 cup Brown Sugar packed
- Then mix in egg and vanilla.1 Egg, 1 teaspoon Vanilla
- Add in cocoa powder, flour, and baking powder. Mix everything together.1/2 cup Cocoa Powder, 1 cup Flour, 1/2 teaspoon Baking Powder
- Then scoop out a ball of cookie dough and flatten in your hand. Add one piece of the peanut butter balls in the middle. Then wrap the cookie dough around it.
- Place on a baking sheet and bake for about 15 minutes.
- After the cookies cool slightly, pour the melted chocolate over the tops of the cookies and let harden.1/2 cup Chocolate Chips
