What are Espresso Chip Cookies?
Think of your classic chocolate chip cookie with a few sprinkles of espresso powder mixed in!
This base cookie is made with browned butter, flour, sugar, and brown sugar! I love the nuttiness that the browned butter adds with the bitter notes of the espresso. Adding in dark chocolate really creates a balanced cookie that's not overly sweet.
I feel like this a very complex flavor combination! I personally like to think of this as my grown-up chocolate chip cookie recipe!
Espresso Powder: 101
I actually didn't know a lot about espresso before this recipe. I'm definitely a tea drinker over here!
Espresso powder and espresso grounds are actually two different things! Espresso powder is brewed espresso that is dehydrated to make these little granules!
It's a great ingredient for using in baking because it gives you all the punch of flavor that espresso has without having to brew the grounds first!
If you can't find espresso powder, you can use instant coffee instead!

Espresso Chip Cookies
Ingredients
- 12 tablespoons Butter
- 2 cups Flour
- 2 tablespoons Espresso Powder
- 1 egg + 1 egg yolk
- ¾ cup Brown Sugar packed
- ½ cup White Sugar
- ½ teaspoon Baking Soda
- ¼ teaspoon Salt
- ½ tablespoon Vanilla
- 1 cup Dark Chocolate Chips
Instructions
- Start by browning the butter.
- Add butter to a saucepan on the stove over medium heat. Stir occasionally until the butter is browning and turns a deep amber color, about 7 minutes.
- Pour butter in a bowl and let cool for about 10 minutes.
- Once butter is cooled slightly, add in sugar, brown sugar, and vanilla.
- Stir together, then add in egg and egg yolk.
- Add in flour, baking soda, salt, and espresso powder.
- Stir until just combined, then add in chocolate chips.
- **Using a small cookie scoop, scoop onto a lined baking sheet. Place about two inches apart, in case they spread.
- Bake for about 13-15 minutes.
- Let cool slightly and enjoy!
