Turmeric Rice Soup is filled with bright, zesty flavors that will wake up all your taste buds! This soup starts off with a base of onion, carrots, garlic, ginger, and turmeric. The warm spices take this simple soup base to the next level with the ginger and turmeric!
I love the rice in this dish, but you could also substitute the rice for a thin noodle if you wanted! It would definitely give off ramen vibes with the noodles, but it would be so delicious!
You could also add in cooked shredded chicken to bump up the protein if you'd like! I've made it both ways and I prefer just the veggies! However, the chicken is good too!

But I also think that beautiful yellow color is another great reason to add turmeric in your dishes!

Feel-Good Turmeric Rice Soup
Ingredients
- 2 tablespoons Olive Oil
- 1 Onion diced
- 2 Large Carrots finely diced
- 2 tablespoons Fresh Ginger grated
- 3 cloves Garlic grated
- 1 teaspoon Turmeric
- 6 cups Chicken Broth
- 2 teaspoons Soy Sauce
- 1 cup Jasmine Rice
- 2 Limes
- Salt and Pepper to taste
Garnish:
- Chopped Cilantro
- Chopped Scallions
- Crushed Peanuts
Instructions
- To begin, prep the ingredients by washing and drying produce. Dice onion and carrots, set aside.
- In a large pot, add a drizzle of olive oil, then add in onions and carrots.2 tablespoons Olive Oil, 1 Onion, 2 Large Carrots
- After the vegetables cook for about 5 minutes, grate in ginger and garlic. Add in turmeric. Let cook for 2-3 minutes.2 tablespoons Fresh Ginger, 3 cloves Garlic, 1 teaspoon Turmeric
- Pour in rice and let the rice toast for 1 minute, before adding in the chicken broth and soy sauce.6 cups Chicken Broth, 1 cup Jasmine Rice, 2 teaspoons Soy Sauce
- Cover and let the rice cook for about 15 minutes or until soft.
- When the rice is done, squeeze in the juice of two limes. Add in salt and pepper to taste.2 Limes, Salt and Pepper
