Mint, chocolate, marshmallow, oh my! These Minty Chocolate Marshmallow Cookies might sound a little crazy, but they are absolutely addicting! The mint and chocolate pair perfectly together with the gooey swirls of marshmallow.
Mint Chocolate Cookies
These Minty Chocolate Marshmallow Cookies start off with a rich and chewy chocolate cookie that gets infused with minty goodness! Peppermint extract is very powerful, so you only need a few drops to get that perfect mint flavor!
Then I add a few chopped up chocolate sandwich cookies! I like to use a knife to chop up the cookies so you get big chunks of cookie in each bite!
The swirls of marshmallow paired with the chopped cookie and the perfect hint of mint is so delicious!
Marshmallow Swirled Cookies
To get those perfect swirls of marshmallow throughout your cookie dough, I like to use marshmallow spread instead of marshmallows! I take a big spoon and dollop the marshmallow spread into the cookie dough, then I use a knife to create swirls in the cookie dough.
I like to use marshmallow spread instead of marshmallows because marshmallows can tend to burn quicker than the cookie dough can bake. This could result in having burned marshmallows on top and a raw cookie on the bottom. If you want to use marshmallows, I recommend putting them on top of the cookies when there's about 5 minutes left of bake time!

- 2 oz Cookie Scoop
- Baking Sheet
- Parchment Paper
Ingredients
- 1 stick Butter
- ¼ cup Sugar
- ¾ cup Brown Sugar packed
- 1 Egg
- ¼ teaspoon Vanilla
- ¼ teaspoon Peppermint Extract
- ⅓ cup Cocoa Powder
- 1 cup Flour
- ½ teaspoon Baking Powder
- ½ cup Chocolate Sandwich Cookies crushed
- ½ cup Marshmallow Spread
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together butter, sugar, and brown sugar. Mix until everything is smooth and creamy.1 stick Butter, ¼ cup Sugar, ¾ cup Brown Sugar packed
- Add in one egg, vanilla extract, and peppermint extract. Mix together.1 Egg, ¼ teaspoon Vanilla, ¼ teaspoon Peppermint Extract
- Then, add in cocoa powder, flour, and baking powder. On a low speed, mix all the dry ingredients to the dough.⅓ cup Cocoa Powder, ½ teaspoon Baking Powder, 1 cup Flour
- Add in chopped sandwich cookies to the dough and stir together with a spatula, making sure to scrape the bottom of the bowl to get everything mixed together.½ cup Chocolate Sandwich Cookies
- Drop dollops of marshmallow spread into the cookie dough and gently swirl with a knife. You want large swoops of marshmallow throughout the cookie dough.½ cup Marshmallow Spread
- Use a medium cookie scoop to scoop out the cookie dough and place on a parchment-lined baking sheet.
- Top with a little swirl of marshmallow and few more crushed cookie crumbles.
- Bake for about 12-14 minutes, the centers will still be slightly gooey.
- Let cool slightly, and enjoy!
