Hot Chocolate Cookies

A warm and cozy drink turned into the most delicious cookie in these Hot Chocolate Cookies! They're a soft chocolate cookie swirled with marshmallow. Have your hot chocolate and drink it too!

What is a Hot Chocolate Cookie?

Think of a delicious, warm and chocolatey cookie with swirls of melty marshmallow throughout. Sounds delicious, right?! That's exactly what this Hot Chocolate Cookie is made of!

This cookie starts off with a chocolate cookie base that's soft, chewy and full of chocolate flavor. I wanted this cookie to embrace the flavors of hot chocolate, so I swirled in marshmallow fluff. The marshmallow and chocolate combination is the perfect combination and totally fits the hot chocolate vibes!

Marshmallows VS Marshmallow Fluff

This recipe could be made using either marshmallows or marshmallow fluff; however, I like using the marshmallow fluff a little bit better in this recipe. Adding the marshmallow fluff to the cookie dough creates these fun swirls throughout the cookies, which reminds me of when the marshmallows start to melt into the hot chocolate.

However, if you only have marshmallows on hand, you can use them instead if you want, just make sure you follow these tips:

  1. Add the marshmallows to the cookie dough in the last 4 minutes of baking. Adding the marshmallows to the cookie dough and then baking for the full time could result in the marshmallow burning before the cookie is done baking.
  2. If you're using big marshmallows, I recommend cutting them in half first before adding to the cookie dough. I found that using the whole marshmallow took longer for the marshmallow to get that perfect meltiness!

I like to add the marshmallow fluff because it's a bit easier to work with than marshmallows, but either one will be delicious! There's nothing better than a gooey marshmallow and warm chocolate cookie!

Ingredients
  

  • 1 ½ cups Flour
  • ½ cup Cocoa Powder
  • ⅛ teaspoon Salt
  • ½ teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • 1 stick Butter room temperature
  • 1 Egg
  • ½ cup Brown Sugar
  • ½ cup Sugar
  • 1 teaspoon Vanilla Extract
  • ½ cup Marshmallow Fluff
  • ½ cup Chocolate Chips

Instructions
 

  • Preheat oven to 350 degrees.
  • In a large bowl, add in butter, sugar, and brown sugar. Using a mixer, mix until light and fluffy.
    1 stick Butter room temperature, ½ cup Brown Sugar, ½ cup Sugar
  • Add in egg and vanilla extract. Mix together.
    1 Egg, 1 teaspoon Vanilla Extract
  • Then pour in flour, cocoa powder, salt, baking soda, and baking powder. Starting on a low speed mix until a dough forms.
    1 ½ cups Flour, ½ cup Cocoa Powder, ⅛ teaspoon Salt, ½ teaspoon Baking Soda, ½ teaspoon Baking Powder
  • Add in chocolate chips and mix together.
    ½ cup Chocolate Chips
  • Dollop in half of the marshmallow fluff and make large swirls in the dough.
    ½ cup Marshmallow Fluff
  • Using a medium cookie scoop, scoop dough onto a parchment paper lined baking sheet.
  • Add more marshmallow fluff to the top to swirl around.
  • Then bake for about 15 minutes.
  • Let cool slightly and enjoy!
