This pumpkin cake is a soft and moist pumpkin cake that is perfect for the holidays! It's easy to make and only requires a few ingredients!
I love making square cakes because you end up getting more pieces than a round cake with less work! I like to dollop a square cake with a ton of frosting, then add pretty swirls and swoops to the top. Then, I add a drizzle of caramel for extra depth of flavor and extra deliciousness!
Tips and Tricks
- To make sure the cake comes out of the pan, be sure to spray the pan with a nonstick spray, then add parchment paper. The nonstick spray helps the parchment paper adhere to the pan a little bit better! Adding the parchment paper helps to remove the cake out of the pan after they've been baked! I use nonstick spray and parchment paper every time I'm working with bars, brownies or cakes!

- To create the creamiest frosting, let your cream cheese and butter softened before mixing together. This helps the frosting blend together easier without any lumps!

Pumpkin Cake with Cream Cheese Frosting
Ingredients
- 1 cup Pumpkin
- ¾ cup Sugar
- ¼ cup Brown Sugar
- ⅓ cup Flavorless Oil
- 2 Eggs
- 1 teaspoon Vanilla
- 1 cup Flour
- ½ teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Pumpkin Pie Spice
- ½ teaspoon Cinnamon
Cream Cheese Frosting:
- 1 block Cream Cheese room temperature
- 1 stick Butter room temperature
- 2 cups Powdered Sugar
- 1 teaspoon Vanilla
- Caramel optional
Instructions
- Preheat oven to 350 degrees.
- In a bowl, mix together oil, brown sugar, and sugar.¾ cup Sugar, ¼ cup Brown Sugar, ⅓ cup Flavorless Oil
- Crack in eggs and mix everything together. Then add in pumpkin and vanilla extract.1 cup Pumpkin, 1 teaspoon Vanilla, 2 Eggs
- To the wet ingredients, add in flour, baking soda, baking powder, pumpkin pie spice, and cinnamon.1 cup Flour, ½ teaspoon Baking Soda, 1 teaspoon Baking Powder, 1 teaspoon Pumpkin Pie Spice, ½ teaspoon Cinnamon
- Whisk everything together until smooth, then pour into a lined 8x8 square pan.
- Bake for about 30 minutes, until a toothpick inserted comes out clean.
- Let cool, while you make the frosting.
Cream Cheese Frosting:
- In a large bowl, combine cream cheese and butter. Whip until light and fluffy.1 block Cream Cheese, 1 stick Butter
- Add in powdered sugar and vanilla.2 cups Powdered Sugar, 1 teaspoon Vanilla
- Dollop the frosting on top of the cooled bars and spread over the top.
- I like to add large drizzles of caramel to swirl into the frosting.Caramel
- Cut into bars and enjoy!
