What are Pumpkin Spice Rice Krispie Treats?
Think of the classic rice krispie treat with crunchy rice cereal, chewy marshmallow, and a sweet vanilla flavor. Now, add in some pumpkin pie spice, pumpkin puree and white chocolate chips and you have Pumpkin Spice Rice Krispie Treats!
I love adding the pumpkin puree to this recipe because it adds a great pumpkin flavor to the bars! I mean, you can't have pumpkin pie spice without the pumpkin!?!
I actually came up with this idea last year. I had made white chocolate mummy rice krispie treats (and you can find that recipe here!) and another pumpkin cookie. When I was storing the leftovers, I had the pumpkin cookies sitting on top of the rice krispie treats. So all the delicious pumpkin spice flavor ended up on the rice krispie treats and were absolutely delicious! I think I ate all of the rice krispie treats before I ate the pumpkin cookies!
It might seem like an unusual flavor combination but I promise, once you try it, you'll be converted.
Tips and Tricks
One tip to creating extra crunchy rice krispy treats is to squeeze out the excess water from the pumpkin puree. This is an optional step, but if you like really crunchy treats, you'll probably want to do this!
I measure out the pumpkin puree then dollop it on a paper towel. Wrap the paper towel up and squeeze gently to get the excess water out! It's actually a surprising amount of water in it! Then add the pumpkin puree in like the recipe says. I've made this mixture both ways and both are delicious!
Another tip to making sure you get the perfect treats is to line the pan with parchment paper! I like to use an extra long piece so it'll hand over the edge of the pan! I use these edges to help pull the treats out of the pan after they set.
If your mixture is getting too sticky at any point, use a little bit of nonstick spray or butter on your spatula or even your hands. This will make sure the mixture won't stick to you or the spatula!

Pumpkin Spice Rice Krispie Treats
Ingredients
- 1 bag Marshmallows mini
- 4 tablespoons Butter
- 5 cups Rice Cereal
- 1 teaspoon Pumpkin Pie Spice
- 1 teaspoon Vanilla
- 1 cup White Chocolate Chips
- ¼ cup Pumpkin Puree
Instructions
- Line a square baking pan with parchment paper.
- Add butter and most of the marshmallows to a large pan. Place on the stove over medium heat until the butter and marshmallows are melted and gooey.
- Stir in pumpkin spice, pumpkin puree, half the white chocolate chips, and vanilla.
- Once the ingredients have been stirred in, add in rice cereal and remaining marshmallows.
- Pour mixture into the square baking pan and press down gently to flatten.
- Let set to harden for at least an hour but overnight is best!
- Melt remaining white chocolate in a microwave-safe plate in 30-second increments.
- Drizzle white chocolate over rice krispy treats.
- Cut into squares and enjoy!
