What is a S'mores Icebox Cake?
Before we go any farther, let's break down what this no-bake-cake is all about! If you've never had one before, they are perfect for summertime because they're icy cold, don't require a stove, and can be made with pretty much any flavor combination!
Typically, icebox cakes are a combination of a whipped cream and cookie/cracker, then it chills in the freezer for a few hours. As the whipped cream firms into ice cream, the cookies will get softer, almost cake like. It's a really fun cake to make and the presentation is so beautiful. My favorite part is when you cut through it and see those beautiful layers.
The amazing part of icebox cakes is that they can be made as simply as grabbing cookies at the store and tub of whipped cream at the store and you're ready to go! I like to make my own whipped cream so you can really add as much flavor as possible and change it up! But this could also turn into a really easy store-bought shortcut dessert!
Chocolate Supremacy
Planning the chocolate layer was maybe the hardest part for me. There were so many chocolate options for me to think of: melted chocolate versus chocolate fudge versus Nutella.
I think the hardest part of making the decision was the fact that they would all be delicious. Could you imagine a chocolate chip cookie icebox cake with a Nutella layer in the middle!?! Yeah, that sounds amazing.
The one hesitation I had with using melted chocolate is that I was afraid the chocolate layer would end up too hard and would make it really difficult to cut into. If you want to use chocolate chips and sprinkle them as the chocolate layer that would be better than melting them down. Chocolate chips would add a nice little crunch too!
Whatever chocolate you use will be delicious though. I mean, it's chocolate, how bad could it be!?!
Tips and Tricks
The biggest tip to make sure this S'mores Icebox Cake comes out of the pan nice and cleanly, is to use plastic wrap! I like to get a large piece of plastic wrap, lay it down in the pan, and then add in the filling. Once the cake is assembled, I use the excess plastic wrap to cover the cake while it chills in the freezer.
To make assembly easier, I like to keep all of my ingredients right in front of me like an assembly line.
If you notice that the whipped cream is coming up the sides while you're stacking, that's okay! I like when there's a nice little edge of ice cream. As soon as you cut it, everyone will be able to see those beautiful layers!

If you froze a s'more, you would get a slightly less delicious version of this S'mores Icebox Cake! The marshmallow ice cream (which would be totally delicious in hot chocolate, am I right?!) with the chocolate fudge and the graham crackers make this dessert the perfect summertime dessert! It's almost better than a s'more!

S'mores Icebox Cake
Ingredients
- 1 pint Heavy Whipping Cream
- 1 cup Marshmallow Fluff
- ½ cup Chocolate Fudge
- 8 Graham Crackers
Garnish:
- Mini Marshmallows
- Chocolate Shell
- Graham Cracker crushed
Instructions
- Start by adding heavy cream to a large mixing bowl.
- Whip on medium speed until soft peaks form.
- Add in the marshmallow fluff and gently fold together.
To Assemble:
- Line a loaf pan with plastic wrap.
- Add a layer of the marshmallow whipped cream to the bottom.
- Add a graham cracker layer to the whipped cream. Breaking pieces as needed to cover the whipped cream
- Add ¼ cup of chocolate fudge to the graham cracker layer and gently spread out.
- Repeat these layers once more.
- On the third time, add a layer of whip and then a final layer of graham crackers.
- Cover and place in the fridge for up to 6 hours or overnight.
- When it's completely frozen, flip the loaf pan over and gently pull the pan off. Then remove the plastic wrap from the top.
- Drizzle a layer of chocolate shell over the top, then garnish with crushed graham crackers and toasted marshmallows!
