What's in a Strawberry Poptart Cookie?
Think of everything we love about strawberry poptarts: the sweet glaze on top, the strawberry jam filling, the sprinkles that are almost crunchy on top. Man, my mouth is watering just thinking about!
All of those delicious flavors get wrapped into this delicious vanilla cookie dough! I use freeze-dried strawberries and strawberry jam to get the perfect strawberry flavor with the sweet white chocolate for the glaze.
One ingredient that I think is crucial to getting the perfect poptart flavor is the almond extract. I know it sounds kind of weird and it's only a small amount, but I promise, it makes a huge difference! The almond extract enhances the vanilla flavor which pairs beautifully with the strawberry jam!
Fresh or Freeze-dried Strawberry Cookies
I know you might be thinking it would be better to add fresh strawberries to this cookie! Especially when summer rolls around and the strawberries are as sweet as candy!
However, the problem with using fresh strawberries is the amount of juice they add to the cookie dough! Baking is a science after all and throwing off the liquid content of the cookies could mean that your dough spreads way too much.
I like to use the freeze-dried strawberries because you get that beautiful strawberry flavor without having to worry about any of the extra juice. They also have a really wonderful texture that I love in these cookies!
Save the strawberries for another dessert, and use the freeze-dried strawberries in this dough!

Strawberry Poptart Cookies
Ingredients
- 1 stick Butter softened
- ½ cup Sugar
- ¼ cup Brown Sugar
- 1 Egg
- ½ teaspoon Vanilla Extract
- ⅛ teaspoon Almond Extract
- 1 ¾ cup Flour
- 2 teaspoons Cornstarch
- ¾ teaspoon Baking powder
- ¼ teaspoon Salt
- ½ cup White Chocolate Chips
- ½ cup Freeze-Dried Strawberries crushed
- ¼ cup Strawberry Jam
- ¼ cup Sprinkles
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, cream together butter, brown sugar, and sugar.1 stick Butter, ½ cup Sugar, ¼ cup Brown Sugar
- When the mixture is fully creamed together, add in egg, vanilla extract, and almond extract.1 Egg, ½ teaspoon Vanilla Extract, ⅛ teaspoon Almond Extract
- Then add in flour, cornstarch, baking powder, and salt.1 ¾ cup Flour, 2 teaspoons Cornstarch, ¾ teaspoon Baking powder, ¼ teaspoon Salt
- Mix everything together.
- Add in crushed freeze-dried strawberries, white chocolate chips, and sprinkles. Mix together.½ cup White Chocolate Chips, ½ cup Freeze-Dried Strawberries, ¼ cup Sprinkles
- Dollop in swirls of jam, and stir until you can see ribbons of jam throughout the dough.¼ cup Strawberry Jam
- Scoop out cookie dough on a parchment paper-lined baking sheet. Bake for about 13-15 minutes.
- Serve and enjoy!
