What's inside a Sweet Potato Tahini Salad?
I had a version of this Sweet Potato Tahini Salad when I was at the cutest little coffee shop by the beach. I know it's kind of odd for a coffee shop to have the most delicious salad, but I'm not going to question it!
They had this harvest salad with kale, sweet potatoes, carrots, goat cheese, and this tahini dressing. This salad was hearty, but still and absolutely delicious! I was obsessed from the very first bite! I like to add quinoa and avocado to make this salad a bit more hearty!
Tips for Perfecting the Kale Salad
When it comes to making the perfect salad, I have a few tips I've learned over the years:
- If you're using kale, you need to massage the kale first! Who doesn't feel better after a massage right?! Massaging the dressing into the kale helps break down the kale so it's a bit softer and doesn't have that acidic bite. If you think you don't like kale, I would try massaging whatever dressing you're using into it first. I used to hate kale salads until I tried it this way!
- Adding texture makes a salad way more interesting and way more filling. I love to experiment with what I add to a salad but typically I try to follow the rule of: something warm, something crunchy, and something salty! Something warm could be adding cooked vegetables, meat, warm quinoa, but I love the contrast of the warm food with the cold lettuce. Something crunchy could be crotons, fresh vegetables, even adding chopped pickles adds a nice little snap in your salad! For something salty, that could be cheese like parmesan, or it could adding nuts or tortilla chips. Playing around with different textures enhances the salad.
- Have multiple hearty elements, especially if the salad is the main course. For this salad, we have sweet potatoes, quinoa, and avocado to really make this salad feel like a full meal. If you were serving this salad as a side, I would add less carrots and sweet potato and maybe even leave out the quinoa. Having multiple elements in this salad makes sure no one is hungry after they eat it!

Sweet Potato Tahini Salad
Ingredients
- 2 Sweet Potatoes peeled and chopped
- 3 Large Carrots peeled and chopped
- 1 teaspoon Cumin
- ½ teaspoon Paprika
- Salt and Pepper to taste
- 1 Avocado
- 1 cup Cooked Quinoa
- 6 cups Kale
- ⅓ cup Pistachios
- Goat Cheese
Lemon Tahini Dressing:
- ⅓ cup Tahini
- 3 tablespoons Olive Oil
- 1 Lemon zested and juiced
- 1 tablespoon Honey
- 1 Garlic Clove
- Salt and Pepper to taste
Instructions
- Preheat the oven to 425 degrees.
- Peel and chop sweet potatoes and carrots to about 1 inch cubes.2 Sweet Potatoes, 3 Large Carrots
- Add sweet potatoes to a parchment lined baking sheet and sprinkle with cumin, paprika, salt and pepper.1 teaspoon Cumin, ½ teaspoon Paprika, Salt and Pepper
- Roast for about 15 minutes, then add in the carrots to roast for another 20 minutes.
- After the vegetables are done, let cool slightly.
- Add kale to a large bowl and drizzle over half the dressing. Massage the dressing into the kale with your hands.6 cups Kale
- Add in sliced avocado, a scoop of quinoa, and some crumbles of goat cheese.1 Avocado, 1 cup Cooked Quinoa, Goat Cheese
- Then add in some of the roasted sweet potatoes and carrots, topped with a drizzle more of the tahini dressing and a sprinkle of pistachios.⅓ cup Pistachios
- Serve and enjoy!
Lemon Tahini Dressing:
- In a mason jar, add in tahini, olive oil, zest of half a lemon, juice of the whole lemon, honey, grated garlic, salt and pepper.⅓ cup Tahini, 3 tablespoons Olive Oil, 1 Lemon, 1 tablespoon Honey, 1 Garlic Clove, Salt and Pepper
- Close and shake until everything is fully combined!
